Mark Wright Instagram – 🍪HEALTHY PROTEIN COOKIES🍪 110 calories, 7 grams of protein per cookie and gluten free. 

* 1/2 cup peanut butter or whichever nut butter you like best 
* 1/4 cup coconut sugar or light brown sugar
* 1 large egg
* 1 large egg white
* Big pinch of salt 
* 1/2 teaspoon pure vanilla extract
* 1/4 teaspoon baking powder
* 1/2 cup vanilla whey protein powder 
* 2 tablespoons coconut flour
* 3 tablespoons mini chocolate chips (I used dark) 

1. Preheat your oven to 180 degrees. Line a baking tray with non stick baking paper.
2. In a bowl, combine the peanut butter, coconut sugar, salt, egg, egg white, baking powder, and vanilla extract. It will be a little hard to mix at first but keep going until well blended.  Then work in the protein powder and coconut flour until well combined. It will seem very dry first but will continue to come together as you stir. Fold in chocolate chips.
3. Roll into balls in your hands then push down onto the baking tray so they spread a little (they will spread further when they bake) 
4. Bake for 6-8 mins – keep an eye on them as you don’t want to over cook them.
5. Let them cool but they taste amazing when they’re still warm.
