Fun Fact: Did you know potato chips were invented by black people? In the summer of 1853, Afro-Native American siblings George Speck Crum and his sister Catherine Speck Wicks invented the world famous snack.
While George was working as a cook at Moon’s Lake House in Saratoga Springs, New York. Oh did I mention, they were New Yorkers too?!
Anyways. Legend has it, a patron ordered a plate of French fried potatoes and sent them back to Crum’s kitchen, because felt they were “too thick and soft.”
In an attempt to teach the picky patron a lesson, George with the help of his sister Catherine sliced a new batch of potatoes as thin as possible, then fried them until they were hard and crunchy, and served them with a heaping amount of salt.
They sent the dish back out to the patron. Much to their surprise he actually loved the dish and it became a hit!
In 1860, 7 years after the invention. George Crum purchased a building on Malta Ave, near Saratoga Lake, and began catering to a plethora of clients such as The Vanderbilt’s, Jay Gould, Henry Hilton, and more. George made sure a basket of potato chips were placed on every table.
George and Katherine, never attempted to patent their potato chip invention. The snack was eventually mass-produced and sold in bags without giving them any credit.
Today we honor and celebrate George Speck Crum and Katherine Speck Wicks for reinventing the way we eat and think about potatoes.
Recipe:
1. Boil one small bag of golden baby potatoes in salted water for 30-45 mins (until tender and can pierce with a fork)
2. Strain and rinse with cold water. Then slice diagonally in half and then quarter the half slices.
3. Place the slices in a marinade of your choice. I used vegan butter with a pinch of sea salt.
4. Heat up your pan then place marinated potatoes inside and season. I used sea salt, black pepper, sage, thyme, basil, and oregano. You can add a bit of citrus to brighten up the dish if you want!
5. Let potatoes sear for 15 mins on medium heat. Then serve.
