That is always my dilemma. Usually I would say I don’t have this ingredient or the other but today I decided to use whatever I have and come up with something absolutely gobsmacking… (reminded me of our market kitchen during my culinary school where we had to make a dish using what we have within a specific time) So I pulled out my chefs knife, put a pan with water to heat and while the water boiled, I chopped up some veggies. I tossed some whole sugar peas (mattar), heated some black beans that I had previously cooked and refrigerated in the same water and again used the same pot and water to cook some soba noodles (buckwheat). I had no lemons so used oranges instead to make a simple dressing using some spices and herbs and a tsp of homemade hazelnut oil (which happened totally by accident but tastes super yumm … more on that later) For now read the ingredients and toss up this super healthy salad for yourself and for your loved ones - Bon Apetit Ingredients :- Buckwheat Noodles 100 gms or one and half bundles (cooks in 4-5 mins max) Black beans - 1 cup (meal prep comes in handy always) Snow peas - 10 to 12 (whole with the pod and the peas tastes crunchy and sweet) Carrot -1 Zucchini - 1/2 Cucumber - 1 Celery sticks - 1-2 {all cut into thin long strips} (use a veggie slicer if you have one) Celery leaves - Finely chopped Sumac - 1-2 Tsp (you can add anaardaana instead for the sour ness) Thyme - 1 Tsp Oregano - 1 Tsp Salt to taste Pepper to taste Fresh juice of 2 oranges Hazelnut oil infused with chocolate (1 Tbsp) Method: Toss all veggies into a big bowl and add the cooked sugar peas, black beans, soba (buckwheat) noodles along with the herbs and spices. Parvathy Omanakuttan Instagram – One of my favorite things to eat on a lazy evening is this scrumptious, flavour bomb of fresh vegetable spring rolls.
This is a house favorite and since 
a lot of people asked me how I made it , here’s the video.
The video for the dipping sauce will follow shortly since I had made the previous batch with what I had in my pantry as a total experiment and I honestly did not expect it to taste better than the traditional peanut dipping sauce that is served alongside these rolls in restaurants. (It was over even before I imagined)

Ingredients:
*Rice paper wraps
*Carrot
*Celery
*Lettuce
*Bell peppers (red, yellow, orange , green)
*Red cabbage or White cabbage 
*Beetroot
*Avocado
*Coriander / mint / parsley (chiffonade)
*Lemon juice 
*Togarashi / red chilli powder / black pepper/ sesame seeds (for added flavor)

P(a)RO TIP :- 
1) Use a vegetable slicer or a peeler to cut the vegetables evenly thin and then use your kitchen knife to cut them into strips. (maybe I will do a video on how I do my meal prep which helps cooking seem way more easier than what people think)
2) Do not leave the rice paper in water for more than 20 secs, it will be a nightmare to get it off the board or surface without it tearing.
