Yumi Stynes Instagram – I made pumpkin semolina gnocchi, HOW’S YOUR WEEKEND GOING??
This was amazing.
Smug afterglow🌅 = sunbaking but in winter.
1.5 litres milk (I used soy)
Warmed to infuse with 1 bay leaf, 2 tsp nutritional yeast, pinch saffron, 1 tsp truffle salt. Brought to a low boil.
Rained in 375g fine semolina
Cooked 5 mins
Removed from heat 😎
Added 200g grated aged cheddar🧀, 300g cooked pumpkin, mixed well (I used the stand mixer), poured into 2 trays (you only see 1), and allowed to chill in the fridge for a few hours.
Served sliced into triangles then grilled to golden bubbling hot with cheese + pine nuts on top then a light grated tomato 🍅 sauce.
