There’s no one secret to the best pasta – it’s a lot of little things. viscosity of the sauce: not too thick, not too thin. umami: in the form of anchovies, parmigiano, chevre and msg aromatics: great garlic, basil

I went to Italy with my dad for the first time in 2001 – I ordered my pasta “al dente”. With my hi-8 camera in hand, I captured the moment on tape, not that I’d ever forget this moment with my dad. I learned my lesson, al dente goes without saying, even though I was just trying to say as many words in italian as possible to impress Dino. thank you Dino for this, wherever you are.
Tips for slicing zucchini!
Did you know that one of Venice’s classic regional dishes is anchovy and onion sauce? They simply call it “salsa” Bigoli are fat spaghetti, like bucatini sans the hole running through the center. Any larger format twirly pasta will do. Good anchovies make this dish sing as opposed to stinking. recipe in my substack follow link in the bio! #pastatime
