My daughter started a little business in lockdown by making epic choc chip cookies and since then we’ve always had them in the pantry. I used this recipe from Queen and it certainly did not disappoint – there’s cream cheese in it for a start which I’d never encountered in a cookie recipe and it adds a little je ne sais quoi. Actually I made a double batch and froze the extra one in balls ready for next week… I added more of the vanilla paste though because I’m crazy like that – go for 2 tablespoons. WHAT YOU’LL NEED
* 2 3/4 cups plain flour
* 1 teaspoon baking soda
* 1 teaspoon baking powder
* 2 teaspoons cornstarch
* 1 teaspoon sea salt
* 140 grams unsalted butter, at room temperature
* 1/4 cup cream cheese, at room temperature
* 1 1/4 cups brown sugar
* 1/2 cup caster sugar
* 1 1/2 teaspoons Queen vanilla paste (I used 2 tablespoons)
* 2 large eggs
* 2 cups dark choc chips
WHAT TO DO:
1. Preheat oven to 180ºc. Line baking sheets with parchment paper.
2. Whisk together flour, baking soda, baking powder, cornstarch and salt.
3. In the bowl of an electric mixer, beat the butter, cream cheese and sugars on until light and creamy. Add in the vanilla and the eggs, one at a time, beating well after each addition. Slowly beat in the flour mixture and stir in the choc chips.
5. Using a 1/4 cup measuring cup measure out balls and push into a cookie cutter onto the tray. Squash a little bit.
6. Bake for 10 to 11 minutes, or until barely golden brown.
