Dina Deleasa Instagram – This morning I picked a bunch of cherry tomatoes from my garden and instantly thought of this recipe.
One way to keep your summer cherry tomatoes a little longer, turn them into this sweet, spicy and savory jam. Then make sure to use it to top a thick slice of Italian bread, a crispy chicken cutlet, or with pasta .

1 pint cherry tomatoes
2 tbsps balsamic vinegar
1 tsp honey
1/2 tbsp kosher salt
1 tsp black pepper
1 tsp red pepper flakes (more if you want it spicier!)
Add the tomatoes, vinegar, honey, chilli flakes,pepper and salt to the saucepot.
Stir to combine and bring to a boil.As the tomatoes heat up they will blister, press down gently with a spatula to help them burst along the way.
Reduce the heat to a simmer and allow to cook for about 30 minutes until the ingredients have thickened and turned into a jammy texture.
Remove from heat. Allow to cool and then transfer to a small jam jar or glass container with a lid. Seal and store in the fridge and enjoy as you wish for up to two weeks.
