When we came back from vacation we found the largest zucchini EVER in our garden. I didn’t feel like setting up the whole dredging station and frying up the zucchini, but I did love the idea of zucchini parmesan. I wondered if this would work on a sheet pan like a deconstructed lasagna. It was worth a shot and I am glad I took it! Recipe-ish below! Follow @dishitgirldina for more everyday #dishspiration 3 tbsp olive oil 1 garlic clove, minced 1/2 tsp kosher salt 1/2 tsp red pepper flakes (optional) 1/4 tsp black pepper Whisk together and set aside. 2 large zucchinis, sliced into 1/16 inch rounds kosher salt 1/3 cup Italian style bread crumbs, divided 1 cup shredded whole milk mozzarella cheese 3 tbsp parmesan cheese, divided 3/4 cup tomato sauce fresh basil Prep the zucchini by slicing into thin rounds, if using a mandoline 1/16 inch is the setting I used. Place the zucchini rounds in a colander and sprinkle with kosher salt. Let them sit for about 30 minutes, this will help draw out excess water. After 30 minutes, lay out the zucchini slices on a paper towel and pat dry. Line a large rimmed baking sheet with parchment paper. Lightly brush the parchment paper with the olive oil mixture. Then layer on half of your zucchini rounds, about 3 or 4 across, overlapping each round and each row below. I did 5 rows. Lightly brush some of the olive oil mixture over the layer of zucchini rounds, then sprinkle about 2 tablespoons of breadcrumbs over top, and 1/4 cup of mozzarella cheese, and 1 tbsp of parmesan. Then add another layer of zucchini rounds, overlapping the same way. Sprinkle remaining breadcrumbs over top. Then spread tomato sauce over top evenly. Top with remaining cheese, and fresh basil. Place in the oven at 350 degrees for 35 minutes, then broil on high for 3 minutes until the top gets brown and bubbly. Being the resourceful people we are, we used hot cherry pepper juice leftover from a dip I recipe tested in this shaken martini! While I may not have an exact recipe , if your a martini lover or been loving the pepperoncini martini that’s been floating around , this is for you! Core memory created! It seems like we can’t shake Sunday dinner even when on vacation! And it was the most comforting thing I could ever dream up! I am always the most proud when I can repurpose ingredients. And this week I have much more to work with than usual! Today the team made the most gorgeous London broil . Turning it into an open face sandwich with leftover provolone from another recipe made for a quick and delicious dinner. Also, having perfectly minced garlic in your fridge is another treat ! This morning I picked a bunch of cherry tomatoes from my garden and instantly thought of this recipe. One way to keep your summer cherry tomatoes a little longer, turn them into this sweet, spicy and savory jam. Then make sure to use it to top a thick slice of Italian bread, a crispy chicken cutlet, or with pasta . Now bring on the holiday recipes ! 😍 1 pint cherry tomatoes 2 tbsps balsamic vinegar 1 tsp honey 1/2 tbsp kosher salt 1 tsp black pepper 1 tsp red pepper flakes (more if you want it spicier!) Add the tomatoes, vinegar, honey, chilli flakes,pepper and salt to the saucepot. Stir to combine and bring to a boil.As the tomatoes heat up they will blister, press down gently with a spatula to help them burst along the way. Reduce the heat to a simmer and allow to cook for about 30 minutes until the ingredients have thickened and turned into a jammy texture. Remove from heat. Allow to cool and then transfer to a small jam jar or glass container with a lid. We had so much fun last night with our seafood boil! There is truly nothing better than eating this meal beachside with a bunch of friends. This morning I finished reading through Job. I thought it was timely that I read through this book when I did. Job was stripped of everything, and his faith greatly tested. Now, I am not saying I am stripped of everything, but I am sure having my faith tested. However, I do not like using the word tested, it is more like it is being stretched. From being stretched I know it will bring me to a deeper level. The idea of testing makes me feel like there has to be the possibility of giving up and walking away. That is just not an option I am considering. But there have been questions, confusion and fear that has come in waves if I am being honest. I am constantly reminded he is king over the flood, the wind, and waves. I can be still and know he is God. One of my favorite verses has always been Phillipians 4:13, however in this season Job 42:2 has replaced it for the time being. Then Job replied to the Lord:“I know that you can do all things; no purpose of yours can be thwarted.” I may have to walk an unexpected road regarding my health at this time. Right in the middle of what seems like the time I should have had a more clear path to step forward into the season that had me firing on all cylinders. But perhaps, there is more to learn so I can cast a wider net. The strongest steel is forged by the hottest fire, maybe my armor needed another layer. So to that I say thank you for picking me for the fire. Whenever I am cooking for myself something like this dish is my go-to! I have a killer cherry tomato recipe going in my book. I also made a version when I was on Guys Grocery Games. This one is a little different. I had tons of cherry tomatoes and different peppers from my garden. I wanted something sweet and spicy. I used a 1 1/2 cups of cherry tomatoes and about 1/2 cup of sliced cherry peppers. Sautéed the cherry tomatoes for 5 minutes then added in the peppers, after another 5 minutes added 1/4 cup white wine and chopped garlic , about 1/2 tablespoon, let that cook down a bit . Added in some chopped herbs, pasta water, and shaved in some provolone cheese ! Which was a real wild card for me , but it was delicious! The Jersey Shore is a place close to my heart. Holding memories with family and friends. There are so many amazing towns and places to eat. I mean you can’t go wrong with a freshly squeezed lemonade and a cheesesteak on the boardwalk! However, here are some favorites from recent years and our first trip to LBI in years! What are your favorite spots?! @redslobsterpot – Brian and I have been visiting Reds for a handful of years. Still one of our fav seafood shacks out of everywhere we have been. We also love stopping at @mudcitycrabhouse before continuing on when we are going further south. @ferrarasbakerylbi truly has one of best jelly donuts I’ve ever had. Their other donuts and stuffed bread are delicious as well! @lbi_shaveice was such a treat! @bgonsar and I have not had legit shaved ice since since going to Hawaii years ago. We have tried places but it is always a let down til now ! @localmarket_lbi not only has delicious coffee drinks, but amazing pop tarts, and great sandwiches to bring to the beach later ! @parkersgaragelbi had a great atmosphere along with green tomato tots, a surprisingly delicious beet salad and bouillabaisse. Don’t miss @tuckerslbi or @wallys_lbi for an amazing breakfast and crumb cake! While @kohrsfrozencustard is the OG of ice cream @skipperdipper was our go while in LBI , I dream of the toasted coconut ice cream ! Sometimes making something good to eat helps get me up and moving. Or sometimes the movement actually helps me read better after I eat when I’ve been down for the count all morning. I made a rustic tomato soup using up some tomatoes I had from the garden, summered them in chicken broth, with scallions. If you have never paired scallions with tomatoes, you must ! I blended it up and returned it to the pot and added a bit of cream. I could have strained it out but I didn’t mind the texture . Yes, my sandwich was a bit unconventional but I used what I had on hand ! I know it seems like a lot of work when your not feeling well. But it did give me a bit of new life ! Your sign to grill up more than some burgers this weekend! My favorite veggies to grill are peppers and eggplant slices. I brush a mixture of olive oil , chopped garlic, basil, salt and pepper over top before charting them on each side. The grill temp is at 450, the peppers take about 6 minutes per side, the eggplant is more like 8 minutes. Then I pour the remaining dressing over top of the bowl or platter, my newest addition is breaking up some burrata over top. This video is just as messy as this salad! I am not always, actually most likely, not standing in my kitchen with my hair blown out, with my best Amazon linked outfit. Although I do wonder why my apron has such a weird top now that I look at it. I figured let me just show you what I’m eating for lunch and get over it if you see my cutting board dirty, my actual measuring cup, not my anthropology prep bowls. Although I do love those! Just because this reel doesn’t have the elements to go viral doesn’t mean this recipe isn’t delicious. Just because you saw my measuring cup and I ate from spatula in my messy kitchen doesn’t make me less of person, haha! And same goes for you. Sometimes you are going to nail that effortless outfit vibe, you may finally get your living room to look like a white& beige museum, celebrate that. But sometimes it’s just not that way, and it doesn’t mean you aren’t worth it , your home isn’t worth having people gather, don’t get on that thought train ! Now chop up a bunch of red cabbage, dice up a cucumber and an avocado. And pour this dressing over top. Don’t forget to give it a hit of balsamic vinegar! Sometimes I really surprise myself at lunch time. Slammed down a pita, slathered it with hummus and my fav roasted eggplant dip from @cava (not an ad). Then I grabbed some Greek yogurt with a squeeze of lemon , pinch of salt. I got fancy making cucumber ribbons with a veggie peeler, chopped up some of Sienas leftover peppers, can’t forget feta or a hit of chili oil. Now that’s making something out of nothing ! I know my reels have been far and few between , but it’s because I’m less a week away from shooting the book and I’ve been putting everything into it while juggling the end of summer/start of school. Oh and then there’s this little thyroid cancer in the mix.
