I saw these beautiful figs in Trader Joe’s and I could not pass them up! They make the best appetizer, sweet or savory ! This time I decided to slice them open , but not all the way through. Then I piped in a Parmesan laced whipped cream. Sounds fancy but really just 1 cup heavy whipping cream, 1/2 cup 1 tbsp of grated Parmesan Reggiano cheese, 1/4 tsp black pepper, and a pinch of kosher salt. Use a hand mixer to whip together at a medium speed until it forms stiff peaks. Cut the tip of a small ziploc bag, fill it with the whipped cream and you have a diy piping bag! Fill the figs with the cream, then arrange them on a serving platter. Bonus points if you serve them on a bed of arugula with slices of prosciutto! Sprinkle fresh basil over top and hit them with some balsamic glaze ! This is another one that I used to sing to Siena in the Nicu, and it’s still part of her bedtime routine 💕 Time really does go too fast. I will always be grateful for the gift that she is. After years of some of you asking can you believe I get to say it?! MY COOKBOOK/DEVOTIONAL comes out in 2025! I started DishItGirl 10-ish years ago, without really knowing I was starting it. Before #ootd, reels, and fast viral hits. I am like a social media grandma, haha! For years I had this proposal on my computer but never felt it was good enough. Not only that, but I wasn’t good enough for it.Then I walked through postpartum depression and shared that with you all. Many times I was uncertain of what I was doing or if I should be doing it at all. I had made so many mistakes, been taken advantage of, been hugely disappointed, and often thought I should walk away. But instead, I would take time off (kicking and screaming), I would fix my eyes on what we had put in front of me and just practice being faithful. Often I would put my head down and work, being good to those around me. Even if they were not in return. Despite that, God open has opened some serious doors every step of the way. I have also had some truly wonderful people come alongside me in recent years. God has used them in ways to speak into my life or pop in at the moment I needed the encouragement the most. Most of them are still working with me and cheering me on today. I know the closed doors were truly for protection, I had to also learn about wolves in sheeps clothing so to speak. Also, come to realize what my worth was through him, not what I was doing. I can’t answer why I have to walk the road of dealing with cancer as I write this book. But what I can say is his timing is perfect, and he is giving me strength to carry this out. I believe the devotional pieces to this book will be even deeper than planned. And I pray that this book gets in the hands of those who need to hear the words he has put on my heart. I can finally give you a piece of my heart and the closest thing to a seat at my table. When I had Siena I had no time to prep, her room wasn’t ready, my hospital bag wasn’t packed, no freezer meals, just the unfolding of an emergency c-section. This time I had the diagnosis, the date , and weeks in the waiting. The more I tired to plan the more anxious I became, it wasn’t working. I couldn’t see past past the surgery, make too many plans because they kept changing or falling through. So I decided to focus on what God had in-front of me . Day to day, week to week, not to let the future I couldn’t control rob me of what was good in the present. So I celebrated the end of Sienas school year, showers and bachelorette parties that had me spending more time with family. Instead of worrying about how my work will suffer, will I lose or be set far back again? I kept working on the one project I say I have been gifted at the moment, kept recipe testing. I have some wonderful friends that make sure I keep going. I am recalling what God has done before instead of worrying. He will redeem my time and take whatever it is I create in his name where it needs to go. No cancer , no surgery and etc can change that. I had been praying for him to stretch my faith and boldness, okay, this is not what I had in mind. But I’ll take it, as crazy as it sounds. I believe going through this widens my heart, deepens my faith. I will cast a wider net and be more prepared for the people I encounter within it. I looking forward to how he works through me here, not dwelling on circumstances beyond my control. So I changed my prep style. I decided to hide his word in my heart. Because as I go into the surgery room with seemingly nothing of my own, or no one , I realize how not alone I am. I was wishing I could carry a piece of paper wit me at one point. But it’s not necessary, I realize he is carrying me and what a joy to know of the family, friends and church that prays for me at that exact moment . The BIGGEST THANK YOU!!! Your messages, prayers, and well wishes have been so felt. I had long hours of waiting, having confusion in the hospital, sleeping basically in a hallway , well not sleeping bc they wouldn’t give me anything, thanks @memorialsloankettering for all of that. But God is so good, even though I woke up in operating room instead of recovery and no one said a word to me, I knew that my prayers were answered and just the isthmus was removed. I smiled like a goofball on the operating table while the people in the room complained that I was still there. No matter what Satan did to make it more challenging God showed up. I had peace on the way to the hospital. I laughed through my headache , hunger from excessive fasting. I did get scared about the IV in the hand bc well, whatever it’s one of my fears. Yes they missed at first but both times it did not hurt. As they were doing it I remembered my epidural and how I was so afraid of that and I felt nothing, I knew he would do it again. He did! Even though I couldn’t sleep, and I was rejoicing, reading your messages, and praying for those who asked to pass the time . I am confident my pathology will be clear. And will continue that way until, we’ll forever. I know I am coming back with SO much more. I hope you are HUNGry !!!! Core Memory Remembered: Leftover Pizza Dough Zeppoles with Grandma The other day we skipped our after school activity and just ended up going with the flow. I usually do not let her miss a practice or dance class unless she is sick. She did have an injured toe that she had been playing on, but we decided a break was in order. Brian wasn’t going to be home for dinner that night. She pulled up her stool to the counter and we made some pizza. I purposely left some dough behind to make zeppoles. Just as my grandma did many nights when I was younger. Somehow she always had a little dough left over that she would fry off quickly. Most nights she sprinkled granulated sugar over the top as they left the frying pan. Siena and I did the same, although Siena’s sprinkle was more of a handful dumped, but we are learning, haha! My grandma’s kitchen was always dimly lit, because it was after dinner. The Golden Girls would be playing on the TV, my mom would be helping to clean up the last of the dinner plates. I would wait at the table patiently for that first warm, chewy, sugary bite. And that is exactly what I was able to create on this most recent night. When we decided it was okay to take a break, and not stick to the plan. To bend the weeknight rules a bit. It was such a bittersweet moment because it had been awhile since I had moved about my kitchen in that old familiar way. Feeling purposeful and at peace . Now I think of this as summer approaches and I am concerned about the schedule. How will I make it all work? I realize I may be better off taking serious inventory of what that “all” truly is. Consider that the list of expectations may need an edit. We are blessed with quite the group of daddies, uncles, grandpas and poppy’s. @bgonsar and Siena are truly besties, my greatest joy is hearing her laugh float in from the backyard while they play after dinner most nights. My dad will always be the ultimate 💕 and the way he pours into his grandkids and is still fixing everything in his adults kids homes is truly amazing. Yet, not surprising. The way she says “Oookaaay” is still exactly the same!!! And this strawberry salad is still a family favorite. The ingredients and dressing recipe is below! This is for the OG DishItGirl crew- In honor of the impending holiday I thought this deserved to be let out of the vault! This video is from a little Mommy and Me series I did awhile back with my favorite Sous Chef. Siena and I ate all of our meals together until she went to preschool. Sometimes she would end up grabbing things off my plate. I think eating with her often encouraged her to try new things because she wanted to do what I was doing. Not the case anymore, but while she was little, it worked! So often when I would cook I would structure our meals with this in mind. I would take the adult version and deconstruct it on her plate. Make it a bit more kid friendly without it being total “kid food.” Now she gags over grilled cheese but will eat broccoli. It seems they all go through picky stages, she’s been in one for about the past two years! What is one meal you and your kids can both enjoy together?! 10 oz of baby spinach and butter lettuce or mixed greens 1 cup strawberries, sliced 1 cup mozzarella balls (celigene style) 1/2 cup baby cucumbers sliced radishes (optional) avocado (optional) Dressing 1/4 cup olive oil 1 tbsp balsamic vinegar 2 tsp honey 1 tsp shallot, chopped 2 tsp dijon mustard kosher salt- to taste pepper-to taste 1/2 tsp dried oregano Pre-wash and dry your lettuce, strawberries, and any other produce you may want to use in the salad. Give the lettuce a rough chop and add to a large bowl. Slice the strawberries and mozzarella balls, add them to the salad bowl. If desired, add in the avocado, radishes, and cucumbers. In a small bowl whisk together ingredients until well combined. Pour over salad, and toss gently to incorporate!
When your recipe testing becomes lunch and he tells you that he would eat this twice a week! It is my version of an Italian style tuna salad. I 💯 prefer the olive oil packed tuna to any other. A little red wine vinegar, ok a lot for me lol. Really is the perfect lunch. I had my walnut basil pesto on hand which really made this sandwich 🔥 I got myself in the kitchen for a bit today. Carbs on top of carbs seem to be a good way to recover, right? I am not totally declaring I am back in the kitchen, but I knew I needed to do something today. I could feel myself getting restless, and complaints creeping in. That old familiar feeling of the world is turning but I am just sitting here watching it from a window. I knew the drama would come at some point, and today was the day. I wasn’t even sure what I was making. And I am not sure I should have been chopping anything, or picking up a pan. You will most likely see my mom yell at me in the comments. But moving around the kitchen and putting this together on a whim snapped me out of it. I have been getting comments saying how my positivity or strength is admired. What I need you to know is what you are sensing is not positivity, mindfulness, or a result of my own strength. But rather a steady hope that comes from knowing who God is and being confident in his plan for my life. Confident in his promise to walk me through any valley. The strength comes from me calling out, saying I don’t think I can do this right now. Or being wheeled into the operating room saying okay, I can’t walk with you anymore, please carry me. And it is not only for me, it is for everybody if you are interested. And as I made something from nothing he said I am here and so are you, and I rested in that as I took a big bite. Recipe-ish below: 1 avocado, smashed 1 tbsp olive oil 1 tbsp basil, chiffonade 1/4 cup chopped radishes splash of red wine vinegar salt & pepper to taste 2 baby potatoes, halved & cut into 1/4 inch pieces olive oil 1/4 tsp kosher salt 1/2 tbsp Trader Joes Crunchy Chili Onion Combine the avocado, olive oil, basil, radishes, red wine vinegar, pepper and salt together until well combined. Spread on a piece of toasted bread, your choice, In a small saute pan, heat the olive oil over medium heat, add the potatoes, sprinkle with salt. Cook until they become golden brown (almost like hash browns), 7 minutes. Add in the crunchy chili oil, saute 2 minutes more. Pour over top of avocado toast. Add some hot honey for an extra kick, if desired.
Listen to me ramble about my favorite Panzanella Salad! That is because I love tomatoes so very much! The dressing is always very vinegar heavy and the crusty bread soaks it up. Below is a recipe for the vinaigrette I used. I sliced 4 heirloom tomatoes, different colors. Along with one cucumber, thinly sliced red onion, and 3 cups of bread cubes. Then I sprinkled in about 1/2 cup of green olives, and topped it off with some torn buffalo mozzarella. Then tossed it all in the dressing below! You know it’s summer when your kids are asking for a snack every 10 minutes , right?! Now I know a slow motion, artfully arranged snack board isn’t totally realistic but here are some ideas that are: * Shop in themes- to avoid same snack fatigue I try to rotate what we have in the house. What helps me is to pick a theme. Like I did here with the island-ish theme. It helps your budget by not buying copious amounts of random snacks. Also can help encourage your little to try new things. * Snack Basket or Bin- I have a drawer feature on my fridge where Siena can open it and choose what she wants. If you do not have this try talking a big plate or basket and putting pre approved snacks on it that are good for grab and go. The snack board also helps during play dates! * Snack Timer- I set an alarm for snack times that are similar to what her school schedule was. When we hear the alarm that’s when we take a break, not every ten minutes lol. I will say this works better for younger kids, I feel like older ones should be able to regulate their snack times. * No snacks after 4pm and even 3:30 if I can help it. I find snacks after those times means a struggle at dinner Take all of this advice with a grain of salt as they say. You know the rhythm of your family, the needs of your kiddos. Set your snack rules and habits accordingly, what works for me may not work for you. With a waterpark, campgrounds,live entertainment, AND its clean!!! Yes, you heard ALL that. Even if you aren’t into roller coasters or kiddie rides, come for the food. Especially the “Whirzle” it’s basically a fudge slushy. The take a literal block of fudge with ice and blend it together. I am desperately trying to recreate it at home. The best way to use Sunday Dinner leftovers? Jam them into a sandwich! I have had a steady stock of walnut basil pesto in my fridge, smeared that on some Italian bread, grabbed a couple of spoonfuls of leftover cherry tomato bruschetta, layered on fresh mozz (don’t tell Siena I ate it all), and some sweet soppressata. I shared this #halfwayhomemade treat today on the New Jersey Morning Show on @onnewjersey This Limoncello Mascarpone can be literally whipped together in 15 minutes. Grab some poundcake from the bakery section and have some cool whip on hand with sone fresh sprigs of mint and some @ciaoandcello limoncello! And it’s a quick and easy party ! 4 cups vanilla pound cake, cubed 8 oz mascarpone 1/2 cup heavy cream 3/4 cup confectioners sugar 4 tbsp limoncello 1 tbsp vanilla 8oz cool whip, divided 2 tsp chopped fresh mint, plus more for garnish 1/2 tbsp lemon zest, plus more for garnish 2 1/2 cups quartered, strawberries In a large bowl whip together the mascarpone, heavy cream, confectioners sugar, limoncello, and vanilla until the mixture starts to form stiff peaks, about 4 minutes. Then add about half of the container of cool whip, and gently fold into the mascarpone cream batter until well combined. set aside. In a smaller bowl add the rest of the container of cool whip, fresh mint, and lemon zest mix gently to combine. set aside. In a small mason jar or wine goblet add 3 heaping tablespoons of the limoncello mascarpone to the bottom, then add a layer of pound cake cubes, then strawberries, repeat the process until you fill the glass. Ending with topping with mint and lemon cool whip. Should fill 4-5 larger wine glass type goblets. Or you could layer in small mason jars. Anyone need a mom minute? This little soda treat has become my new favorite guilty pleasure! I love all things cherry, especially those deliciously syrupy Amarena cherries! At first I would just plop one or two into the soda. But then I started thinking about the OG soda fountain treat, Egg Creams. Which is typically made with seltzer water, chocolate syrup, with half and half. You can find Amarena Cherries in Trader Joes and I think they are pretty good! Or I have seen them in my local grocery store or Italian deli as well! Maybe share this sweet treat with the momma in your life this weekend! 1 can @drinkolipop vintage cola (or regular cola) 1/4 cup heavy cream 3 tbsp amarena cherry syrup mint for garnish, optional In a small glass whip the heavy cream and cherry syrup together until it begins to thicken using a small hand held frother. Or whip vigorously with a whisk. Pour half the cola into a large tall glass, then add your heavy cream a mixture a little at a time to make sure the glass doesn’t overflow! Then mix until uniform ! Add a cherry on top and enjoy !
Unpopular opinion right now: You do not need anything from Amazon Prime this week to make you happy. I am not knocking those who love to shop the prime days and outline the sales. I mean, sometimes I link things for you! However, if I need to remind myself then chances are you could use the reminder too. Because I know some of us are holding our breath as we check at the grocery store. Scrolling through IG or LTK accounts feeling like I need to burn down my house and start all over again. Or feeling like if I just bought full outfits from my favorite influencer I would feel more “put together.” Well- that may very well be true, haha! Just because I want it doesn’t mean I need it. That is a hard truth I have to practice daily. Also, contentment doesn’t mean trying to go to the other extreme of wanting nothing. But there is this place in the middle where sometimes you have to wait for you want, or use more discernment towards what you think you “need.” I tend to walk through the day adding up everything I don’t have, or could really “use.” I find myself getting frustrated and restless. Then on my way down the driveway to get the mail I see how pretty my hydrangea plant is this year. I smile as I cut some stems and brought them inside, instant flower arrangement. I smiled at the way Siena stood in her play kitchen “sauteing” cherry tomatoes for me. I noticed the way she held my hand and skipped from errand to errand with me one day. I have started being intentional about taking notice and logging the little things that make my heart skip a beat. The times where I stop and stare, smiling a bit. I think that is God’s way of soothing my restless heart, of calming the storm of discontent that sometimes starts to swirl inside of me. Because underneath my frustration that swells at times, I truly am nothing but grateful. I just get too distracted sometimes. Grill up the peaches and corn with some crispy prosciutto, sprinkle on some tarragon and goat cheese , your basically done! You can find cubed prosciutto in the grocery store, if not take slices and fry them up like bacon. Then crumble it over top, make sure to reserve any oil that it creates in the pan. Because you can add a squeeze of lemon, and a little olive oil to make a little extra “something” to finish the salad ! Also, the flavor of the tarragon with really key, Basil would work well but it’s definitely going to be a different flavor profile if you will, so if you haven’t tried tarragon, now is the time ! I’ll include a loose, recipe-ish below ! 7-8 ears of corn, grilled, kernels removed 5 ripe peaches, sliced 1/2 lemon, juiced Olive oil Kosher salt Pepper 4oz diced prosciutto 4oz crumbled goat cheese 2 tbsp tarragon, chopped Husk your corn removing the outer part and the “silk.” Place on your grill did about 15-20 minutes. Remove from grill, let cool, then remove kernels, placing into a large bowl. To remove the kernels, slide a knife down the sides of the cob, the kernels should remove easily. Slice the peaches and toss with a drizzle of olive oil (about 1 tbsp), 1 tsp kosher salt, 1/2 tsp of pepper. I line a grill basket with foil , place the peaches on top and grill. As the peaches are grilling, works with the prosciutto. Heat a sauté pan over a medium flame, then add the prosciutto to the pan, sauté until crispy, about 10 minutes. Remove from heat and reserve. Remembering to reserve and drippings as well! Add the crispy prosciutto to the bowl with the corn kernels. Again season with kosher salt and pepper to taste, drizzle olive oil over top and toss. Add in half of the chopped tarragon and toss gently. Arrange the peaches on a platter, spoon corn salad over top. Top with goat cheese and remaining tarragon. Welcome to what I want for Mother’s Day, Ep 1: “For you to clean it up” There has to be some pod of researchers somewhere willing to study the phenomenon that is only the mom in the house bringing things up the stairs or picking a rogue piece of anything up off the floor. Who thinks that stairs are shelves or cubbies? And how do perfectly rational people fool themselves into thinking something on the floor should stay there until further notice? I remember my poor mother always asking me to empty the laundry basket in the hallway. She washed and folded them, all I needed to do was put them away. However, it would take me 5 days. I publicly apologize to mom! To be fair, Brian has become waaaaay better at a couple of things. Like emptying the dishwasher and cleaning dishes in the sink. One of our most frequent disagreements came from my utter refusal to believe that he didn’t have the mental capacity to at least take a stab at what needed to be done. He is brilliant at work, on a set, I mean, award winning. I witness him weekly troubleshoot, putting out fires, and anticipating needs. These chicken thighs are OUT OF THIS WORLD in the flavor department. I start off by dredging the chicken thighs in a little bit of brown sugar. This helps to caramelize the outside a little bit. Then the peaches are simmered in white wine and marsala wine. Yes, it totally works! I use both tarragon and basil in this recipe which may seem a little crazy. But I tested it using one or the other, and found it was tastier if I could use both. So this may seem unconventional, but go with it! You could use bone in chicken thighs, however the cooking time will be longer. Make sure to go by internal temperature. This recipe is sure to become a new sweet and sticky summer favorite!
