Dina Deleasa Instagram – Carbs on top of carbs seem to be a good way to recover, right?

I am not totally declaring I am back in the kitchen, but I knew I needed to do something today. I could feel myself getting restless, and complaints creeping in. That old familiar feeling of the world is turning but I am just sitting here watching it from a window. I knew the drama would come at some point, and today was the day.

I wasn’t even sure what I was making. And I am not sure I should have been chopping anything, or picking up a pan. You will most likely see my mom yell at me in the comments. But moving around the kitchen and putting this together on a whim snapped me out of it. I have been getting comments saying how my positivity or strength is admired. What I need you to know is what you are sensing is not positivity, mindfulness, or a result of my own strength. But rather a steady hope that comes from knowing who God is and being confident in his plan for my life. Confident in his promise to walk me through any valley. The strength comes from me calling out, saying I don’t think I can do this right now. Or being wheeled into the operating room saying okay, I can’t walk with you anymore, please carry me. And it is not only for me, it is for everybody if you are interested.

And as I made something from nothing he said I am here and so are you, and I rested in that as I took a big bite. Recipe-ish below:

1 avocado, smashed
1 tbsp olive oil
1 tbsp basil, chiffonade
1/4 cup chopped radishes
splash of red wine vinegar
salt & pepper to taste

2 baby potatoes, halved & cut into 1/4 inch pieces
olive oil
1/4 tsp kosher salt
1/2 tbsp Trader Joes Crunchy Chili Onion

Combine the avocado, olive oil, basil, radishes, red wine vinegar, pepper and salt together until well combined. Spread on a piece of toasted bread, your choice,

In a small saute pan, heat the olive oil over medium heat, add the potatoes, sprinkle with salt. Cook until they become golden brown (almost like hash browns), 7 minutes. Add in the crunchy chili oil, saute 2 minutes more. Pour over top of avocado toast. Add some hot honey for an extra kick, if desired. | Posted on 29/Jun/2023 01:16:19
