Parvathy Omanakuttan Instagram – Ingredients (Makes 8 Pancakes/Waffles )
Dry Ingredients
– [ ] 1 Tsp freshly grated Nutmeg Powder
– [ ] 1 Tsp Cinnamon Powder
– [ ] 1/4 Tsp Salt
– [ ] 2 Tbsp Rock sugar powder
– [ ] 1 Tbsp Baking Powder
– [ ] 2/3 Cup Organic Whole Grain Spelt Flour
– [ ] 1/3 Fine Rice Powder
– [ ] 1 cup mixed berries (Strawberries, raspberries, blueberries)
– Except for the berries mix all the dry ingredients and set aside.
Wet Ingredients
– [ ] Half Grated Apple
– [ ] 1 ripe banana mashed
– [ ] 1 Tsp Vanilla essence
– [ ] 3/4 Cup Coconut milk (any milk of choice)
– Mix the wet Ingredients to form a thick slurry and pour into the dry ingredients.
– Mix well. You may need a little extra milk to ensure the batter isn’t too thick.
– Add the berries and mix well
– Heat the waffle maker and/or pan, add some oil/ butter/ ghee
– Use 1/3 cup of batter and pour in to the waffle maker or pan
– Flip – Let it cook through completely
– Serve with sliced banana on the side & Enjoy 😉
