Parvathy Omanakuttan Instagram – Ingredients (Makes 8 Pancakes/Waffles )
Dry Ingredients 
– [ ] 1 Tsp freshly grated Nutmeg Powder 
– [ ] 1 Tsp Cinnamon Powder 
– [ ] 1/4 Tsp Salt 
– [ ] 2 Tbsp Rock sugar powder 
– [ ] 1 Tbsp Baking Powder 
– [ ] 2/3 Cup Organic Whole Grain Spelt Flour 
– [ ] 1/3 Fine Rice Powder 
– [ ] 1 cup mixed berries (Strawberries, raspberries, blueberries) 
– Except for the berries mix all the dry ingredients and set aside. 
  Wet Ingredients 
– [ ] Half Grated Apple 
– [ ] 1 ripe banana mashed 
– [ ] 1 Tsp Vanilla essence 
– [ ] 3/4 Cup  Coconut milk (any milk of choice) 

– Mix the wet Ingredients to form a thick slurry and pour into the dry ingredients. 
– Mix well. You may need a little extra milk to ensure the batter isn’t too thick.
– Add the berries and mix well 
– Heat the waffle maker and/or pan, add some oil/ butter/ ghee
– Use 1/3 cup of batter and pour in to the waffle maker or pan
– Flip – Let it cook through completely 
– Serve with sliced banana on the side & Enjoy 😉

Parvathy Omanakuttan Instagram – Taco Pizza 🌮 +🍕 
“People who don’t like Taco or Pizza are rare. When one can enjoy a bit of both, there is nothing to compare” – PO😜  This is our favorite mid-week meal. It keeps our spirits up through stressful work days.  Get your knife and cutting board or even a vegetable slicer if you are not a pro, but try this recipe and let me know how it goes. 
Ingredients: 
– Home made roti of your choice (I am using spelt flour rotis with flax seeds and chia seeds)
– Vegetables 
1. Red Cabbage 
2. Lettuce 
3. Black beans soaked and boiled 
4. Tomatoes (skinned and de seeded)
5. Capsicum (as many colours as you can get)
6. Organic sweet corn (*optionalif you can find some) 
7. Scallion / Spring onions 8. Mint leaves 
9. Coriander leaves 
10. Salt
11. Pepper 
12. Paprika powder 
13. Pickled Olives & Jalapeño (*Also optional)
14. Fresh grated cheese ( Pepper Jack, Yellow cheddar , White Cheddar) 
15. Avocado 🥑 
– Crisp up the roti on a tava or in oven at 150 C for 15-20 mins until they are crisp
– Thinly slice all vegetables (helps to speed up the cooking in the oven/ tava)
– Top up all veggies (except avocado), herbs and cheese of the crisp roti 
– Bake in the oven until cheese starts to melt or place in a frying pan with the lid on to let the vegetables steam slightly and  the cheese to melt
– Place on the serving plate, sprinkle salt, pepper and paprika
– Enjoy 😉
