Cloud Cookies by @sarabethsnyc
Ingredients:
– 1 ⅓ cup superfine sugar
– 1 ⅓ cup packed light brown sugar
– 1 cup (2 sticks) unsalted butter, at room temp, cut into ½ in cubes
– 2 large eggs, at room temp, beaten
– 2 cups unbleached all-purpose flour
– ¾ tsp baking soda
– ¼ tsp fine sea salt
– 2 cups toasted sliced almonds
– 2 cups chocolate chips

Directions:
1. Position racks in center and top third of oven and preheat to 350°. Line three half-sheet pans with parchment paper.
2. Rub sugar and brown sugar together through a coarse wire-mesh sieve into a medium bowl; set aside. (You can use your @kitchenaidusa Sifter + Scale attachment here on white sugar!)
3. Beat butter in the bowl of your KitchenAid 7 Qt Bowl Lift Stand Mixer fitted with the paddle attachment on high speed until smooth, ~1 min. Gradually add sugar mixture, then vanilla. Beat, occasionally scraping the bottom/sides of the bowl, until mixture is pale yellow and light textured, ~5 mins. Gradually beat in eggs.
4. Sift flour, baking soda & salt together into a medium bowl. With mixer on low, add dry ingredients mixing just until each addition is incorporated. Add almonds and chocolate chips and mix until just combined.
5. Using a 2 inch diameter ice cream scoop, portion the batter onto the prepared pans and slightly flatten each ball of dough. Bake two of the pans of cookies, switching position of the pans from top to bottom and front to back about halfway through baking, until cookies are evenly golden brown, ~15-18 mins. During the last 3 mins, rap each pan on the rack. The cookies will deflate and their signature cracks will appear on the tops. Repeat with third pan. Cool on pans.
6. Yum!

Today I am thinking about the town of Alpaugh in California’s Central Valley, an area that grows 50% of the fruits and vegetables in America and 75% of the nuts. The irony of this town full of growers: Alpaugh is a food desert, meaning their grocery store is devoid of anything fresh—no apples, bananas, carrots, broccoli. A gallon of milk goes for about $7 in the liquor store, the idea that the people putting beautiful fresh food on our tables have no access to any themselves is 😭🤯.
@cynthiamcfadden and I visited Alpaugh last week and, as always when I visit small towns in rural America, my heart was filled by the amazing kids, their loving and resilient parents, the strength of community, and the determination and love of the school leadership and teachers. The struggles are evident, but the hope is, too—especially when @savethechildren is part of the system.
The cherry on top of our time in Alpaugh was learning that, as part of @onceuponafarm‘s commitment to donate #AMILLIONMEALS through our partnership with Save the Children, OFARM’s farm fresh goodness has been distributed to babies and kids up and down the Valley by @cencalfoodbank, offering them the same vivid flavor, texture and nutrient dense food you may have in your fridge today.
It takes a web to nourish children in underserved communities: WIC and SNAP benefits are vital, food banks, backpack programs, farm to community programs, organizations like Save the Children and @nokidhungry—every bit helps. I am grateful to have seen first hand how Once Upon a Farm is a small part of the solution, grateful to be Co-Founder of a mission driven company full of passionate people, and to be led by the impeccable @jforaker11 and our OG @cassandracurtis. I am grateful for every member of our team and to all of our customers that dream right alongside us.
And because I am feeling all the feels today, I am grateful to my mentor at Save the Children of fifteen years, @markkshriver, who sees the possibility in every tough situation, who is the ultimate champion for kids in America, and who, when the world is out of whack, helps me focus on helping however I can, wherever I can and whenever I can. #PretendCookingShow: Zoodles and Tomato Sauce. 🍝 #KitchenAidAmbassador You mean we can have pasta but it’s zucchini? Where has the spiralizer been all my life?! Simple and delicious— thanks to my @kitchenaidusa Spiralizer Attachment. Marcela Hazan’s famous three ingredient sauce is so easy and so good— you will be a hero. Yum. #ad

Marcella Hazan’s Tomato Sauce & Zucchini Noodles
Ingredients:
* 28 ounce can San Marzano whole peeled tomatoes
* 5 tablespoons butter
* Onion, peeled & cut in half
* Salt
* 4 small zucchini
* 1 clove garlic, minced
* Olive Oil
* Dried Thyme & Rosemary
* Fresh ricotta cheese
* Shaved parmesan cheese

Directions:
1. Combine tomatoes, their juices, butter and onion halves in a saucepan. Add a pinch or two of salt.
2. Place over medium heat and bring to a simmer. Cook, uncovered, for about 45 minutes. Stir occasionally, mashing any large pieces of tomato with a spoon. Add salt as needed.
3. Discard the onion before tossing the sauce with pasta or “pasta.”
4. Meanwhile, while cooking, use your @kitchenaidusa Spiralizer Attachment to create ribbons of zucchini noodles.
5. Drizzle olive oil in a sauce pan. Add garlic and zucchini noodles. Sauté until soft, ~4-5 minutes. I added dried thyme and rosemary (and a pat of butter 🤫😬). Remove from heat.
6. I quickly used my @kitchenaidusa 7 Qt Bowl Lift Stand Mixer to whip some fresh ricotta.
7. Combine zoodles and tomato sauce in a bowl. Top with a dollop of whipped ricotta and shaved parmesan.
8. Yum.
