Recipe:

Kale
Mixed Greens
Asparagus
Heirloom tomatoes
Walnuts
Cucumber
Red onion
Roasted Chic Peas

Salmon
Season both sides w/
Pink Himalayan salt
Corse black pepper
Garlic powder
Smoked paprika
Sear on both sides in equal parts vegan butter and olive oil in a cast iron

Asparagus:
Coat in olive oil

Season to your liking
I used:
Pink Himalayan salt
Garlic powder
& coarse black pepper
Sauté in olive oil in a cast iron skillet

Chic peas:
Coat in Olive oil
Season w/
Turmeric
Garlic powder
Pink Himalayan salt
Smoked paprika
Cumin
Onion powder
Roast on 400 for 30 min or until your desired crunch

Vinaigrette:
Dijon mustard
Champagne vinegar
Shallot
Garlic
Honey
Olive oil

Combine ingredients (whisk in olive oil last)

Cherry compote:
Cherries
Rosemary
One lemon
zest of one lemon

In a sauce pan, add frozen or fresh cherries, two sprigs of rosemary, honey, the juice of half a lemon, the zest of a lemon, and a pinch of salt once brought to a boil. Turn down and let simmer until the cherries have a syrup-like consistency.
Add to vinaigrette mixture and season to taste.

Combine salad ingredients, add dressing, garnish with parsley or any fresh herb of choice, top with salmon & enjoy!
