Sameera Reddy Instagram – Fashionable Fried Chiroti🤣 #happydiwali 🪔

Chiroti
3 cups maida
1 cup rava
1 cup rice atta/flour
1 cup ghee
1 tsp vanilla essence / elaichi powder 
1.5 cups coarsely ground sugar
A pinch salt
Oil or ghee to fry. 

Combine maida, rava, salt, 3 tbsp ghee , vanilla essence and water and knead stiff atta. Keep aside for 20/30 minutes with a wet cloth. 
Knead again and make 6 balls. Roll out medium rotis. 
Combine rest of the ghee and rice atta. Whisk well. 
Place one roti on flat surface. Apply 1 tablespoon ghee/rice flour mix all over it. Place another one and apply again. Continue till all the rotis are done. 
Then roll into one tight, long roll. With a sharp knife, cut 3/4 inch pieces. 
Place each piece sideways and flatten with your fingers into a puri shape. 
Fry in medium hot oil or ghee. One or two at a time. Give it space and keep pouring hot oil into each centre for even cooking. Keep stirring. Once a side browns slightly, flip and fry the other side. 
Remove and sprinkle sugar while it is hot. You can add powdered elaichi ( if not used the vanilla essence in dough ) 
This stays for 15 days easily.
