Continue till all the rotis are done. Then roll into one tight, long roll. With a sharp knife, cut 3/4 inch pieces. Place each piece sideways and flatten with your fingers into a puri shape. Fry in medium hot oil or ghee. One or two at a time. Give it space and keep pouring hot oil into each centre for even cooking. Keep stirring. Once a side browns slightly, flip and fry the other side.
