Happy Day of Thanks everyone. There is a lot of pain in the world today and sadly everyday so if we counter that with love, kindness, caring and doing what we can to help those in need it has to have an effect. Hello party people! It’s been a long time since I posted a reel. I made this the other night. I make a variation of this meal a lot. Use whatever veggies you’ve got. Chop it up. Mix it up put some vinaigrette or olive oil and lemon on it and call it a day. All right, I may have added salt and forgot to video that as well. Here’s what I used this time. Persian cucumbers Cherry tomatoes Kalamata olives Artichoke hearts Chick Peas(garbanzo beans) Quinoa Balsamic vinegar (I use more vinegar than I do oil) Olive oil Parsley Basil Black pepper Sea salt Mix it up. Eat it up. Yum! A simple lemon vinaigrette is quite delicious on this as well. I just didn’t have any lemons. OK, I’ll get back to making these videos, and I will be more specific and what I do. Simple Edamame Salad So simple. So delicious. So fresh. And… full of protein. Did you know that one cup of edamame has 18.4 grams of protein? If you want it for a main and want even MORE protein, or to make it feel more substantial you can add some tofu or quinoa. They will suck up the dressing though so maybe you want to add more.
