First and foremost I want to thank all of you for your love, good energy, prayers, well wishes and donations for my dear friend, my Lovely Lea, Lea Love. I can’t thank you enough. The outpouring of support while I was with her in the hospital warmed my heart so deeply, you have no idea. Love is all around. Many of you didn’t know Lea but you opened your hearts and wallets to help. Truly…no words can express my gratitude enough. I still don’t know what to write. She was surrounded by her 4 children and 4 of us women who were blessed to be able to be with her during her final days and moments. Hello kind ones. I am reaching out to you on behalf of one of my dearest friends who is in major medical trouble. Lea. Lea is one of the most unique, radiant, magical souls I know. We met just before my 19th birthday in our first acting class in Chicago. We lived together in London while we studied at RADA (I never would have thought about that possibility without her telling me that’s what we needed to do). Lea is the kind of woman who LIVES LIFE. She takes every opportunity that presents itself and turns what may seem like the mundane into a beautiful adventure. She is brave and she taught me how to be brave too. Lea sees the positive in people. She is beautiful, curious, compassionate and kind beyond measure. She is a hard working, wonderful single to mother to 4 beautiful kids that need her. This is Lea. She is my friend. She is my sister. She is my Lovely Lea. I am asking that if you are someone who prays to hold her in yours. My first time making #focaccia Pretty easy but I didn’t use a large enough bowl and did not put enough oil in the pan. Be generous…Gotta make it slick!! Ingredients: 4 cups flour 2 teaspoons salt(I used pink Himalayan) 1 packet active yeast (2 1/4 teaspoons) 2 tablespoons olive oil (more to coat pan) Toppings: Coarse flakey salt Rosemary Kalamata olives And drizzle of olive oil Mix 2 cups luke warm water with the yeast set aside for 20 minutes (it will foam) Mix flour, and salt with fork, whisk or whatever tickles your fancy. Add water and yeast mixture. Mix until sticky. Drizzle a little oil on top to keep from drying out. Cover with damp towel or plate and let rise(proof) for 1 1/2-2 hours. Remove cloth and then stretch dough a bit by folding it like in video. Cover with towel again and let sit for another 30 minutes. Oil 9×13 pan generously (unlike in video) and put in dough. Stretch to fit pan. Cover for another 30 minutes to an hour. Drizzle some more oil on dough and fingers and make dimples in dough, salt it, place rosemary and olives on (press in) and BAKE at 425 for 35-40 minutes until golden brown.
