As the weather gets colder, you’re definitely going to need an immunity boost 💪 I love making this simple curry that can be eaten as a soup or with rice 😊
It is vitamin rich (especially in Vit C ) so it’s the perfect immunity boost ✨
Ingredients: (serves 2)
Olive oil for cooking
2 heaped tsp cumin seeds
grated ginger + garlic 1 tbsp
red onions
bell peppers
brocolli
carrots
sweet potato
potato
and any other vegetable you’d like to add!
1 whole fresh tomato pureed
3 tbsp tomato paste
Method:
Saute the cumin seeds till they’re warm brown and fragrant, add onions, ginger, garlic and bell peppers. Toss till blistered and then add tomato puree + paste.
Stir in and drop all your vegetables( if you want to save time, you can pressure cook the broccoli,carrots and potatoes before hand like i did). Add sufficient water (depending on how much gravy you want) and cook with the lid on.
Once your vegetables are cooked, it’s ready to serve 😍
