We had an extra bag of carrots from our last shopping trip. I wanted to make something sweet and came up with a recipe for these glazed carrots. All you need is: βœ… one bag of carrots βœ… peeled garlic βœ… fresh ginger βœ… honey βœ… brown sugar βœ… vanilla βœ… balsamic vinegar βœ… thyme βœ… salt βœ… dried or fresh parsley βœ… butter βœ… olive oil . Chop up your carrots, garlic and ginger. In a frying pan, add some butter and olive oil. Next add your carrots and a splash of water and cook for a few minutes to soften them up. . Next add the brown sugar, vanilla, nutmeg, garlic, balsamic vinegar, ginger, and honey. Stir in a sprinkle of thyme and salt. . Let it simmer on medium heat for about 10 minutes or until the sugar becomes caramelized. Add to a plate and top with some chopped fresh or dried parsley. . What you’ll need to make this recipe is:
βœ… Leftover rotisserie chicken 
βœ… frozen or fresh yellow corn 
βœ… yuca 
βœ… white or golden potatoes
βœ… carrots 
βœ… onion 
βœ… celery
βœ… minced garlic
βœ… thyme
βœ… bay leaves 
βœ… 2 packs of sancocho seasoning 
βœ… can or container of chicken broth 
βœ… chicken bullion seasoning 
βœ… salt

Pour some olive oil in a frying pan with a portion of your celery, onions, carrots, and garlic. Next add your whole leftover rotisserie chicken (including the bones and gelatinous bits!) and can of broth. Heat until chicken is tender. Strain the juice and separate the meat from the bone- add to containers- and save for later.

Cut up and skin your yuca, potatoes, corn, carrots, onions, celery and add to a big pot. Add in the separated meat and broth from chicken. Toss in 2 packets of sancocho mix, chicken bullion, thyme, 2 bay leaves, garlic, thyme and salt.

Boil on medium heat for 45 minutes or until everything is tender and cooked through. Make sure you stir continuously so that your veggies don’t stick to the bottom of the pan.

Now serve it up with a side of rice!

Lanisha Cole Instagram – Milanesa con platanos πŸ₯©πŸ€ŒπŸΎ I love making this super easy and delicious meal! πŸ’ƒπŸΎ Last week Onyx and I picked up some groceries πŸ‘‰πŸΎ all you need for this recipe is:
βœ… 2lbs of beef milanesa
βœ… 2 semi ripe or green plantains 
βœ… Vallarta’s carne asada secret seasoning 
βœ… vegetable oil 
βœ… soy sauce 
βœ… vinegar 
.
Season meat with the sazonador and add to preheated skillet with a tablespoon of oil. Brown on both sides. Next add some vinegar and soy sauce. (I don’t measure to be honest so add enough that the pan bottom is covered with the liquid) Let the meat simmer for 10 minutes 
.
Next cut up the plantains into diagonal slices and add single layer to preheated frying with oil. You don’t want to overcrowd your pan. Fry until light/golden brown then set aside onto plate lined with paper towels- this will soak up the excess oil! 
.
Continue cooking meat until the sauce is reduced and dark brown. 
.
Remove from heat and serve it up! 
.
It’s a quick and tasty meal that I make a few times a month. Onyx and Bee both love it!! ❀️✨
