Megan Mitchell Instagram – Two easy appetizers you should add to your holiday spread this season: my marinated olives and spiced mixed nuts. I like to serve them with @carharttfamilywines 2020 Quello Grande which is like a beefed up Sangiovese so it goes well with these light apps but also works with your heartier dinner. Let’s raise a glass of something delicious this holiday season. Cheers!
Marinated olives:
• 15 ounces whole castelvetrano olives, drained
• 16 ounces EVOO (or enough to cover the olives)
• 1 orange, peeled with a vegetable peeler
• 1 lemon, peeled with a vegetable peeler
• 1 tbsp. peppercorns
• 3-4 garlic cloves, smashed
Directions:
• place everything in a medium skillet or small sauce pot
• bring up to heat over low and simmer for 10 minutes
• serve warm
* use leftover oil in dressings or marinades
Mixed Spiced Nuts:
• 4 cups raw mixed nuts (walnuts, almonds, cashews, pecans and/or pistachios)
• 2-3 tbsp. EVOO
• 2-3 tbsp. maple syrup
• 2 sprigs rosemary, roughly chopped
• Maldon for sprinkling
• pinch of cayenne
Directions:
• pour everything onto a medium sheet tray. Toss to coat
• place in a 325F preheated oven and roast for 15 minutes
• remove and toss
• roast for another 10-15 minutes or until golden brown and toasted
