Pictured here with 90-day tallow aged fillets of beef from @philipwarrensbutchers and the most incredible wild red prawns.
🍤 I can’t explain the depth of flavour we get from these beautiful prawns, a real purity and sweetness like no other. We utilise every last bit! The tail, carefully extracted and roasted entirely over the coals, seasoned with lime and glazed with an oil made from the heads and shells, The rest of the oil turned into an emulsion.
The beef, we serve as a tartar, showing the great depth of flavour, seasoned with smoked olive oil and red wine shallots. Finished with pickled kohlrabi and a touch of finger lime. | Posted on 31/Jan/2024 22:24:21
