The hand-dived Orkney scallops we use at @no6padstow are potentially one of my favourite ingredients of all time and the process of cooking these beauties is almost hypnotic. We lightly roast them before resting over smouldering juniper and pine. Finished with lime, fennel pollen and flakey Cornish sea salt.

This is our ‘Scarpetta’, a wonderfully light milk bread made using a classic Shokupan dough, but with proper Cornish milk from @trinkdairy. The phrase “la scarpetta’ in Italian, means to clean your plate with a piece of bread, enjoying every last remnant of a delicious meal, and that’s just what we encourage our guests to do. Served alongside our saucier dishes, like our Wild Turbot with that incredible Iberian ham mousseline 👊🏾🔥
‘Land & Sea’ a dish that features some of our favourite produce and one we are constantly playing with. Pictured here with 90-day tallow aged fillets of beef from @philipwarrensbutchers and the most incredible wild red prawns. 🍤 I can’t explain the depth of flavour we get from these beautiful prawns, a real purity and sweetness like no other. We utilise every last bit! The tail, carefully extracted and roasted entirely over the coals, seasoned with lime and glazed with an oil made from the heads and shells, The rest of the oil turned into an emulsion. The beef, we serve as a tartar, showing the great depth of flavour, seasoned with smoked olive oil and red wine shallots. Finished with pickled kohlrabi and a touch of finger lime.
