We were doing trials of breads for @bungalowny & I heard this line. It me hard by its truth.
So so true.
Chalo iss pardes ne kam se kam yeh toh sikha diya hai ki gahoon main kabhi zaika tha hi nahin. Rootiyon ki woh mithaas woh mere Maa kay haath ki thi.
Living in the foreign land has taught me atleast this much that there is no flavor in the flour. The sweetness of the breads came from my Maa’s hands.
Feb 28th, it is 2 years today.
You continued to hold my hand even after your soul had left your body.
I’m holding on to you forever & ever.
You were my sister, mother, best friend, my twin.
My Sarthee. My Krishna.
I hope I can keep all my promises with you Radha. ❤️
Before we start feeding the World at @bungalowny starting Mar 23rd, I am visiting my hometown Amritsar to seek the blessings of the divine.
The is the holy city that blessed me to be a chef & taught me the true meaning of food.

35 Days To Go! Golden Temple Amritsar
Blessed by the divine as we begin our journey of @bungalowny on Mar 23.
Humbled to touch & cook in the utensils that serve thousands of souls everyday at Durgiana Mandir.

36 Days To Go!
Though most of the day I was at Bungalow kitchen, I had to visit Radha’s favorite Ganesh Temple Flushing for dosa.
This used to be our favorite ritual, visiting the temple & then the canteen.
With all my love for the chefs there I say, that the dosa doesn’t taste the same without her.
I’ve been cooking & creating restaurants for almost 40 years, I can say that for sure that it’s all about the company we share our meals & celebrate.
For 47 years my sister was my best friend & the most amazing & irritating person as sisters can be. ❤️
But always the first person to stand by me.
Thank you God for giving me a sister, but wish she had a longerrrr life.
ALWAYS & FOREVER – Viku

This might be one of the best days I’ve spent in Amritsar.
I took my Maa to her esteemed college – Govt College for Women after 55 years.
Maa was honored with “Our Pride Award” by the most amazing principal.
Mrs. Daljit Kaur. She also gave me a beautiful spice box for @bungalowny
And we also met Mrs. Urmila Khairah (Maa’s first English Professor)
Maa was overwhelmed by so many memories of her youth. And we all recreated an image on the same staircase in the college where she graduated from. ❤️❤️❤️

I feel humbled that Bungalow Chef-coat is blessed by the priest.
Inderjit Singh is like an elder brother, mentor & we used to work together at Spice Route almost 20 years ago on Fulton Street.

Prabhat Bhopal is truly inspiring person to me. When do many people forwarded me this video, I had to post it as my gratitude.
As we are 30 days away from opening @bungalowny, I needed to hear this too. ❤️
I know somewhere a Buried Seed is going to hear this & begin to blossom.
Share this for that seed. ❤️⭐️🌱

One of the most heartfelt pieces about a chef’s journey and a restaurant opening I’ve read in years.
Though it’s only 4 weeks to go for @bungalowny opening, but this project has been in preparations & dreams since the day I started cooking.
Thank you @virsanghvi for your support & love.

The aisles of Kalustyan’s have inspired me for almost 24 years.
Flavors & ingredients from around the World especially India…. All under one roof in the heart of New York City.

Black Pepper – This humble spice changed the course of mankind.
No doubt it was known as black gold.
Columbus was in search of these vines from India, when he discovered the New World.
I have hand picked the worlds best variety from Tellicherry to be used at Bungalow in one dish.
Can’t wait to unveil the creation tomorrow.
Trivia- Did you know that Black Pepper is water pollinated? Which means that every drop of rain that falls on the vines carries the pollen to the blossoms below.
The leaves are like umbrella to create the perfect speed & precision.
A perfect example of Indian soil, rain, gravity & sun.
Black Pepper is a poetry of nature.
