1. what is “going to flower” : I’m referring to annual vegetables “bolting” or shooting up a flower stalk. Seeds follow the flower stalk, so many call this “going to seed”
2. It’s usually my responsibility that they went to flower (they get tough and bitter when they flower, so most don’t eat them at this stage). It’s either because I crowded, planted a cold favoring crop too late in season, or the soil was poor.
3. I can turn my “mishaps” into magic. Most ‘perfect’ gardeners will never see a carrot seed. If you let a couple of bolted/ gone to seed vegetables live out their time in the garden, you can collect seeds that you otherwise wouldn’t have access to.
4. Your plant’s flowers make incredible “companion plants”. So let’s say you pull up 2/4 bolted broccoli plants, and replant later in the season. You’re literally creating the perfect succession companion plant. Bugs that sense the weaker veg will go for your flowering plant, and beneficial pollinators attracted to the flowers will arrive. Your newly planted alternatives will be ushered in by their community in harmony.
