I couldn’t wait to share this 15 minute baked fish (I call it Italian baked fish) because it’s so so good and perfect for a busy weeknight. Add it all to a small roasting pan (adjust the amounts to fit your needs and I used cod here but any firm fish or even large shelled shrimp will work) in a 400 degree oven for 10 min and broil for 2. I served mine with linguini and tossed some of that sauce with them and it’s so good!! I also added a couple tbsp of white wine to the mix but forgot to take a clip of that 🤦🏻♀️ anyway, make it, it’s delish!
2 filets of cod
Handful of cherry tomatoes
Handful of black olives
1 tbsp of capers
Garlic
Olive oil
2 tbsp of white wine
S,P and oregano
Dab of butter
