To make my tangy spiced “red chook sticks” at home here’s the recipe.

Mix cup of Greek yoghurt with six crushed cloves of finely chopped garlic, 2tbsp of minced ginger, 1/4 cup of good tandoori paste, 2tbsp of tamarind paste, 2tsp of smoked paprika, 2tsp of Kashmiri chilli powder and 2tsp of dried fenugreek leaves (kasuri methi). Add 1kg of chook thighs cut into large chunks, stir to coat and marinate for at least 30 minutes. Skewer and cook in the pre-heated airfryer at top temp / 200c for 10mins. Or in the oven or under the grill until cooked thru and a little burnt in places.
