Oliver Ingrosso Instagram – Some of the stuff from the new menu (starting from today) !
Pic 1. Pizza fritta: deep fried focaccia dough, then topped with tomato sauce and Parmesan.
Pic 2. Pasta pomodoro con stracciatella: tomato sauce on whole plum tomatoes. Topped with stracciatella (it’s the inside of the buratta) and Parmesan.
Pic 3. Spaghetti nerano: deep fried zucchini with a sauce of butter and Parmesan. Classic Italian dish that’s not so common in Sweden at all.
Pic 4. Pasta e fagioli: cavatelli pasta and then yellow onion sautéed with rosemary in olive oil and cannellini beens. Gets insanely creamy with the pasta water and Parmesan. Its a play on the more classic one and something the Swedes might not understand but the Italians will love. Might also be the best dish we’ve had on the menu.
