Shubho Noboborsho, Happy Baishaki, Puthandu, Vishu, Pohela Boisakh, Bohag Bihu ans Pana Sankranti to everyone celebrating the New Year of prosperity! I love how across India we share the same spirit but celebrate in so many different ways and cuisines. I had originally tried Chalkumro (Ash Gourd) Bora on my trip to Kolkata a few years back and was tempted to try the same with Lauki and stuffing of chana dal. So here is my version – Take my word for it it’s Delishaaas and perfect with your dal, matra or ghugni chawal 🤤❤️

Doodhi Bhaja
Peel & slice a lauki
Make an incision as shown (don’t cut all the way through)
Blanch the lauki slice
For the stuffing
1/4 cup Fresh coconut
1/4 cup Chana dal, boiled
2 tbsp Soaked yellow mustard
2 Green chilies
1 tsp Sugar
Salt to taste
Blend into a smooth paste
1 tbsp Mustard oil
Add the paste
& cook till thickened
Look at that 🤌🏻🔥
For the batter
1/2 cup Maida
1/4 cup Sooji
1 tbsp Poppy seeds
1/2 tsp Haldi powder
Salt to taste
1 tsp Sugar
Mix well
Add water little by little to form a batter
Stuff the lauki with the filling
Dip it in the batter
& fry till GBC 🔥
Serve hot with dal chawal
