Briony May Williams Instagram – Now these cookies are something else!!! Peanut Butter, Chocolate and Fennel…yes fennel! I came up with the combo when prepping for the Bake Off recipes and trust me when I say they are next level delicious 🤤 I made over 100 of these for people to taste this weekend at the @royalbathandwest Food and Drink Festival and they went down an absolute treat!!! You can swap out the peanut butter for biscoff spread (or do half and half!) and leave the fennel out if you want (but they taste amazing with it!). Enjoy!!! ❤️

Peanut Butter, Chocolate Chip and Fennel Cookies
Ingredients

125g unsalted butter, softened
250g chunky peanut butter/biscoff spread 
125g golden caster sugar
175g light soft brown sugar
1 large egg
300g self raising flour 
1 tsp salt
1-2 tsp crushed fennel seeds
250g dark chocolate chips

Method

1. Oven on to 180°C. Line 2 baking trays with parchment.
2. Butter, peanut butter and sugars in stand mixer with paddle attachment. Beat until well combined.
3. Egg and milk in a mug and beat with a fork until combined. Tip into butter mixture and beat till combined. 
4. Flour, bicarb, baking powder, salt and crushed fennel seeds in a bowl. Whisk to combine.
5. Tip flour mixture into butter mixture and gently mix until combined. Add choc chips and mix until just combined.
6. Break off a brussel sprout size piece of cookie dough and roll into a ball. Place on parchment and press down to flatten. 
7. Bake for 8-10 minutes until they are just hardening. Put on cooling rack. 
The dough will last in the fridge for a week and the freezer for 2 months.

I was lucky enough to whip up some delicious flapjacks recently with ‘Bee Kind’ honey from 2 hives thriving on the rooftop of the @kyocera_document_solutions_uk Reading HQ 🍯 They are incredibly proud of their hives and produce jars a year that they hand out to their customers, partners and visitors. These flapjacks are a true celebration of honey with honeycomb made with honey and honey in the flapjacks. Plus they are super easy to make 🐝 You can find the full recipe below to make your own using the honey of your choice ❤️

HONEY FLAPJACKS 
Ingredients 
Flapjacks 
225g unsalted butter 
225g light soft brown sugar 
170g honey
450g rolled oats

Honeycomb 
130g golden caster sugar 
75g honey
Pinch of salt 
½ tsp bicarbonate of soda 

To finish
50g dark chocolate, melted

Method
Oven on to 180°C fan. Grease and line a 30cm brownie tin. Make the honeycomb by heating the sugar, honey and salt in a pan until the mixture is bubbling and reaches 145°C (use a jam thermometer). Remove from the heat and stir through the bicarbonate, the mixture will bubble. Pour the honeycomb onto a sheet of parchment and leave to set for 5 minutes until hardened then bash into small pieces. Heat the butter, sugar and honey together in a pan until melted then mix through the oats. Stir through the broken up honeycomb then pour into the prepared tin. Bake for 25-30 minutes. Drizzle over the melted chocolate then leave to cool.
