Spoon about 1-2 tablespoons of apple pie filling onto one half of each puff pastry circle, leaving a small border around the edges. Brush the edges of the pastry circles with the beaten egg. Fold the pastry over the filling to create half-moon shapes. Crimp the edges to seal the turnovers. Brush the tops of the turnovers with the beaten egg, then sprinkle generously with the cinnamon sugar mixture. Place the turnovers onto the prepared baking sheet, leaving space between each one to allow for expansion. Bake in the preheated oven for 20-25 minutes, or until the turnovers are golden brown and puffed up. Remove from the oven and let cool on a rack for a few minutes before serving.
