More than 20 years old but this classic by Chef Sanjeev is still a favourite in my home. This recipe in his first show Khana Khazana changed not only his life but the lives of so many Indian households and restaurans, including mine. Aaj ka jaam, Shaam Savera ke naam.

Shaam Savera

Blanch 2 Spinach bundles
& blend them into a thick paste

1 tbsp Oil
1 tsp Jeera
1 tsp Garlic, chopped
1/2 inch Ginger, chopped
1 Green chili, chopped
Sauté till fragrant
Add the Palak paste
Salt to taste
1 tsp Coriander powder
1/2 tsp Garam masala powder
Mix well
1/4 cup Roasted besan
1/4 cup cashew powder
Mix well
& cook till thickened
Look at that 🤤😮‍💨

For the gravy

1 tbsp Oil
1 tsp Jeera
1/2 inch Cinnamon stick
1 Bay leaf
A few black peppercorns
3 Green cardamom
1 Black cardamom
1 tsp Garlic, chopped
1 inch Ginger, chopped
1 Green chili, chopped
2 Onions, diced
5 Tomatoes, diced
1 tsp Coriander powder
1 tsp Red chili powder
1/4 tsp Haldi powder
1/4 tsp Garam masala powder
Salt to taste
A handful of cashews
1 tsp Kasuri methi
Mix well
Add 1 cup Water
& cook for 1/2 hour on slow flame
Remove the whole spices
& blend into a smooth paste

1 tbsp Butter
1 tsp Honey
Mix well
2 tbsp Fresh cream
Mix well

For the paneer mixture

250g Paneer, crumbled
1 tsp Black pepper powder
1/2 tsp Fresh coriander, chopped
Mix well
& shape them into balls

Flatten the Palak mixture
& stuff with the paneer mixture.

Lightly coat in corn flour
& fry till GBC 😮‍💨🔥

Serve the gravy with the koftas
