During the pandemic I had plenty of time to think about the future. My future as a chef, the future of restaurants, both my own and the industry as a whole, and the legacy I want to pass down for future generations. This led to a lot of soul searching about what my career has meant to me. I figured it was finally time to tell that story. This is the story of my life, from the swim club in Elizabeth, New Jersey, where I flipped burgers as a teenager, to my first restaurant jobs in New York City, and to the judges’ table of Top Chef. The recipes included throughout the book are ones I love to make at home for my family and friends. These dishes make up the memories of my life and I hope they create memories for you too.
