Claudia Sandoval Instagram – This one-pan, set-it-and-forget-it kinda meal is my favorite. I get to eat healthy, enjoy ingredients with minimal intervention, all while keeping dirty dishes to a minimum. As a single person I always roast double the veggies because I can use them for other meals like Omelettes, Salads, or Sides for other dishes.
