I’m incredibly grateful for the invitation from @chefclaudiasandoval to be part of this magnificent Culinary Concerto. Cooking in front of our table a menu inspired in @tresestrellasorganicfarm , a wine pairing curated by @romina.mendozab with @henrilurton outstanding wines and the live orchestra playing was truly awe-inspiring. It was a unique experience that I will cherish forever. Tonight I got to visit my Homie Chef Matt of @tributepizza for a last birthday Dinner with my dearest friend annbeaverhausen who is in town from San Francisco. What a treat! Tonight’s Tribute Special was “The Weight In Gold” Pizza with wood fired maitake mushrooms, goats milk Gouda, foraged ramps and a tableside shaving of black truffles. Chef also sent out some perfectly ripe heirloom tomatoes with fresh burrata, balsamic and basil dust along with the fluffiest focaccia of my life. Oh and then there was the charred broccolini with a sunny side up egg, Calabrian Chiles and Fried Garlic 🤤. Oh and dessert!!! The Banana Bread Pudding was to die for. Run. Don’t walk. Menu changes often, don’t worry, everything they make is to die for!

🌮🍤Spicing up your Taco Tuesday and Cinco de Mayo with partner @wonderfulpistachios to bring you these mouthwatering Shrimp Tacos featuring Salsa Macha Verde 🌶️💚Made with love and a touch of @WonderfulPistachios No Shells Jalapeño Lime, they’re a flavor explosion you won’t forget. Check out the full recipe below! For Salsa Macha Verde: ¼ cup chopped Wonderful Pistachios No Shells Jalapeño Lime 1 Fresh Anaheim Pepper, minced 1 Green Bell Pepper, minced 2 Fresh Jalapeno, minced 4 garlic cloves, minced ¼ cup scallions, minced 1 cup vegetable oil (236ml) Kosher Salt to taste Shrimp Ingredients: 1 ½ lb. Shrimp Peeled and Deveined 1 tsp kosher salt ¼ tsp pepper 6 corn tortillas For the Slaw: 1 cup shredded red cabbage 1 cup shredded carrots ¼ cup red onions, julienned ½ lime juice Directions: For the Salsa Macha Verde: 1. In a heat proof bowl, combine peppers, Wonderful Pistachios Jalapeño Lime, garlic, and scallions until well mixed. 2. In a saucepan set over medium flame, heat vegetable oil until almost smoking and glossy. Immediately pour the oil over the Chile mixture carefully. Allow oil to cook chiles with heat. Mix to combine. Allow salsa to cool completely before seasoning. 3. Season salsa with kosher salt once cooled. For the Slaw: 4. In a bowl combine cabbage, carrots, and onions and toss to combine. Season with lime juice and salt to taste. For the Shrimp: 5. Season shrimp with salt and pepper to taste. Sear shrimp in a non-stick pan, set over medium low heat for 1-2 minutes on each side with 1-2 tbsp of oil. To plate: 6. Warm up corn tortilla and place on desired plating 7. Birthday Celebrations continued with dinner with friends @osileo221 @bettinahahnluxurytravel @1surfbird at @cardellinosd and everything was incredible!! Then we walked over to surprise alexandrorsalazar at his @sdartadvisory gallery and found him painting 😍😍😍 took a little detour for a drink at @caminoriviera where we met a bunch of new friends. What a night! lol gracias @osileo221 for getting me out. Love you amiga.
This one-pan, set-it-and-forget-it kinda meal is my favorite. I get to eat healthy, enjoy ingredients with minimal intervention, all while keeping dirty dishes to a minimum. As a single person I always roast double the veggies because I can use them for other meals like Omelettes, Salads, or Sides for other dishes. I am using @lxvwine Khmelli Sunelli Spice Mix for this one because I enjoyed this with an incredible red wine. Hope you make this one. 🫶🏻😘
