Orange Violet Blender Cake
Ingredients
For the cake:
1 whole medium orange (8-10 ounces)
1 1/2 cups sugar
1/2 cup vegetable oil
1/2 cup whole milk
2 eggs
1/2 teaspoon salt
2 cups self rising flour
For the icing:
Zest and juice of 1 small orange (you will need 4-8 tablespoons of juice)
2 cups powdered sugar
Violets to garnish 

Method:
Preheat the oven to 350 and spray a standard size bundt pan with nonstick spray. Set aside.

To a blender add the whole orange, sugar, oil, milk, eggs and salt and blend until the orange is broken down. There will still be small pieces of the rind, that’s good! 

Add the flour to a bowl and pour the blender mixture into it. Stir to combine. Add the batter to the bundt pan and bake until the center is set and the top is puffed and golden, about 40-50 minutes. 

Remove from the oven a cool for 10 minutes before Turing it out of the pan. Cool for another 30 minutes. 

Meanwhile make the icing by combining the orange zest, powdered sugar and 4 tablespoons of orange juice. The mixture will be thick. Add more juice, 1 tablespoon at a time until the texture resembles school glue. 

Drizzle evenly onto the cake and garnish with violets. Serve immediately or wrap and store for up to 3 days.
