Damaris Phillips Instagram – Last week’s gussied up episode was one of my favorite to date! If you’ve ever struggled making a biscuit you should go watch the full episode. Link in story and bio. Buttermilk Drop Biscuits
2 cups AP flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1 tablespoon granulated sugar
1 teaspoon kosher salt
1 cup cold buttermilk
1/2 cup melted butter
Egg (optional)

Method:
Preheat the oven to 450 degrees F.

In a large bowl whisk together the flour, baking powder, baking soda, sugar and salt.

Pour in the buttermilk and melted butter and stir until a dough form. After the dough comes together give it a couple extra stirs just to make sure enough gluten has developed to give the biscuit structure.

Using a 3 ounce full portion scoop, dollop the dough onto a cookie sheet lined with parchment. Combine the egg with 1 tablespoon water and whisk. Gently brush the tops of the biscuits. Bake until the tops are golden and the center is just set, about 11-13 minutes.
Remove from the oven and enjoy immediately.
Makes: 6 biscuits
Damaris Phillips Instagram – Everyone needs an easy from scratch chocolate cake recipe! This one works with every frosting, can be made into cupcakes and freezes beautifully!
Classic Chocolate Cake
Ingredients:
1 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
3/4 cup cocoa powder
1 1/2 teaspoons baking soda
3/4 teaspoon baking powder
3/4 teaspoon fine salt
1 1/2 cups buttermilk
1/4 cup vegetable oil
1 tablespoon vanilla extract
2 large eggs

Preheat the oven to 350 Degrees F. Line two 8 inch pans with parchment.
Combine the flour, sugar, cocoa powder, baking soda, baking powder and salt in a large bowl. In a second bowl, whisk together the buttermilk, oil, vanilla and eggs. Make a well in the dry ingredients and add in the wet mixture, whisking until just combined.
Divide the batter evenly between the two prepared cake pans. Bake on the center rack until puffed, the sides pull away from the edges and an inserted cake tester comes out clean, 30 to 35 minutes. Remove the cakes from the oven, immediately cover them with clean kitchen towels and press any domed portions down, careful, it’s hot! (This will help make sure that you don’t have to level the cakes.) Allow the cakes to cool in their pans to room temperature. When completely cooled, invert onto plates.
