Just kidding! Kind of…This sheet pan Chicken Sausage with Broccoli and Roasted Potatoes came out so good I almost held this recipe back. But I figure let me see if this one beats the algorithm,haha! This is a definite week night winner. You can prep it ahead of time. Or cook it completely, heat it up, and add the garlic butter sauce when you are ready to serve. However you do it, be prepared to add it to your weekly rotation!
½ cup olive oil
½ tbsp finely chopped garlic
½ tbsp chopped rosemary
¾ tbsp kosher salt
1/4 tsp pepper
1lb baby potatoes, each cut into quarters
1lb chicken sausage, each link cut into bite size pieces
3 cups broccoli florets
4 tbsp unsalted butter, melted
½ tsp dijon mustard
½ tsp hot sauce
½ lemon juiced
1 ½ tbsp chopped garlic
2 tsp dry parsley
Preheat the oven to 425 degrees
Place the potatoes in a large bowl.
In a small bowl whisk together the olive oil, garlic, rosemary, salt, and pepper. Pour half of the mixture over the potatoes, toss to coat. Then add the potatoes to one half of a large sheet pan. Place in the oven for 15 minutes.
Meanwhile, add the sausage pieces and broccoli florets to the same large bowl. Pour the remainder of the olive oil mixture over top. Toss to coat.
After 15 minutes pull the potatoes out of the oven. Give the potatoes a gentle toss. Add the broccoli and sausage to the other half of the pan. Place back in the oven for 20 minutes.
Melt the 4 tablespoons of butter in a small bowl. Add the dijon mustard, hot sauce, lemon juice, garlic, and parsley. Whisk together.
After 20 minutes, shake the pan a bit in the oven. Then put the broiler on for 3-4 minutes, until the sausage starts to become golden brown.
Remove from the oven. Pour the butter mixture over the sheet pan and gently toss. Serve immediately
