Another family gathering in the books! Another moment #athekitchensink where I smiled because I heard the lively conversation and the chaos of the girls running around. I’m truly happy to be at the sink doing a thousand dishes. Why do it? Why deal with stress of prepping and planning? The cooking, the cleaning? Because it’s not about that. Yea, it takes work, but tell me how full your heart is during. And when everyone chats while helping you dry the dishes. Or where you spend time with your mom and daughter in the kitchen days before prepping. I know she will remember that. Repetition creates habits, and I’m glad we have a habit of being together. We feel as if something is amiss if we are not. This happens because my grandma did it, so did my mom, and now I will too. It doesn’t always have to look the same or be fancy, just do it. My book, At the Kitchen sink is all about this. I can’t wait to share such a large part of my heart in this way, hoping it inspires others to get their loved ones together. Good Friday is generally a somber time, as it should be. As we all observe and remember the ultimate sacrifice, So why am I feeling so much joy today? I realize it is because I am looking at Good Friday through a different lens. I see his journey to the cross as the ultimate demonstration in faith. The promise that even in death there will be life. He conquered the grave. I repeat that to myself now, as I walk my own valleys. He conquered the grave and he thought of me as he did it. I have that hope and promise to hold onto. It may be dark for a moment, it may be quiet and ominous, but there will always be light. I keep repeating myself when I point out, will it come in the way I expect, no. But that doesn’t mean Sunday isn’t coming. He made the journey to the cross knowing what was ahead. He knew the plan, he trusted in it, he did not deviate from it. He kept pressing on through the ridicule, through the beatings, the spit, and the thorn of crowns. Then when they thought he was finished, he rolled that stone away. So that when I think I am finished, I can reach out my hand, and he will push that stone away with me. Siena had been asking a lot of questions about all the ins and outs of Easter. We wanted her to understand that although life is hard, things happen, all is never lost because of what Jesus did. She brought up my “surgeries,” she doesn’t fully understand the word “cancer.” I looked at her to say, no matter what Jesus was and is taking care of mommy. And he takes care of you and Daddy. As usual, what a comfort to know he begins where I end. I can count on his promise, that he never leaves or forsakes us. No matter what Satan will put in my path, he will never truly be victorious. A year ago this weekend we had the first @shelivesfearless conferences in NJ. At the time I was diagnosed with Thyroid cancer 3 days prior to the event. I didn’t tell anyone until after the conference. However during my session I talked about relentless faith and how I planned on continually reaching for him in whatever would lie ahead. He had delivered me from a hard season of PPD after emergency birth. I wanted to encourage others who felt themselves being battered by the storm to get their eyes off the wind and rain, and look to Him, because He truly is faithful. A year later, after multiple surgeries, radiation treatment, three days prior to the conference I was at another doctor’s appointment. Where they stated they felt my cancer had been remediated. The timing was not lost on me. I shared in my talk that through the past couple of months I have committed to taking inventory with God. As I had to take a step back in some places, while he strengthened me in others. I had to face that my biggest hurdle wasn’t cancer but unbelief. I had to chose which perspective I was going to walk with. Those 30% percent, or 5% or 45% chances doctors gave me when explaining all my risk factors. As they continue to measure aspects of my health throughout time. Or will I live in the 100% confidence that He decides my outcome, and will walk me through the valley. And he will also climb with me to any mountaintops. And friends, quite frankly, valley’s aren’t the worst place to be. That is where you dig deeper, discovering the well of peace and strength in the most tangible way. She Lives Fearless is not about me or any one person, but that God can use anyone and any situation to minister to others. Serving alongside such wonderful people has been a gift. As much as I may teach, what I am able to learn supersedes that. I always say it is an honor to pray for those whom I come in contact with. I have truly given over my vision board to him. I am being intentional about living in that 100%. Legoland NY where everything is “awesome” or is it?! You asked, so here are my honest thoughts, not sponsored! First let me say, Siena was sooooo excited to go! The girl loves to pack her suitcase and go literally anywhere. She really had a great time! Bunk beds and themed rooms were her dream come true. The hotel is cute and has some fun themed qualities. Like a lego treasure hunt in the room, dance party elevators, and a little indoor play place. For adults, I would say it reminds me of a holiday in that they slapped legos on. But Brian and I agreed it was clean. What annoyed me a bit was the “included” breakfast. I’m thinking like small continental buffet. Nope! You can grab some cereal and a banana from what looks like a make shift cereal station. And you can get coffee and juice. Everything else was an add on. Yes, a plate of eggs and bacon is included, but pancakes, French toast and etc , add on. Legoland is fun! I think the fact that it was freezing cold (it flurried) didn’t help. When we first got there a lot of rides were closed, it seems like the park has a hard time waking up. That’s about as nice as I can say it, haha! There are plenty of Lego installations to marvel at, along with a lot of construction at the moment. Also bc of how cold it was a bunch of rides were out of order. If your used to Disney or bigger parks, you may feel like this one needs a jumpstart. But again, Siena thought this was one the best trips ever, and that’s what made it all worth it. We stopped at @warwickvalleywinerydistillery on the way up and they way home for lunch. It’s only 15/20 minutes away and so worth it. Their food is outstanding, get the roast pork sandwich! Then hop into the town to explore @fizzylifting and @whiterabbitrestorations . In the town of Goshen, NY we opted to have dinner and found a cute ice cream shop, @sweet_tymes . I am not going to name the place we went for dinner, instead I’ll tell you what I wish we tried : El Rancho Mexican, Sorrentos Gourmet Pizza, or Cafe Yen. I hope this is helpful! If this recipe doesn’t go viral, I am OUT! Just kidding! Kind of…This sheet pan Chicken Sausage with Broccoli and Roasted Potatoes came out so good I almost held this recipe back. But I figure let me see if this one beats the algorithm,haha! This is a definite week night winner. You can prep it ahead of time. Or cook it completely, heat it up, and add the garlic butter sauce when you are ready to serve. However you do it, be prepared to add it to your weekly rotation! ½ cup olive oil ½ tbsp finely chopped garlic ½ tbsp chopped rosemary ¾ tbsp kosher salt 1/4 tsp pepper 1lb baby potatoes, each cut into quarters 1lb chicken sausage, each link cut into bite size pieces 3 cups broccoli florets 4 tbsp unsalted butter, melted ½ tsp dijon mustard ½ tsp hot sauce ½ lemon juiced 1 ½ tbsp chopped garlic 2 tsp dry parsley Preheat the oven to 425 degrees Place the potatoes in a large bowl. In a small bowl whisk together the olive oil, garlic, rosemary, salt, and pepper. Pour half of the mixture over the potatoes, toss to coat. Then add the potatoes to one half of a large sheet pan. Place in the oven for 15 minutes. Meanwhile, add the sausage pieces and broccoli florets to the same large bowl. Pour the remainder of the olive oil mixture over top. Toss to coat. After 15 minutes pull the potatoes out of the oven. Give the potatoes a gentle toss. Add the broccoli and sausage to the other half of the pan. Place back in the oven for 20 minutes. Melt the 4 tablespoons of butter in a small bowl. Add the dijon mustard, hot sauce, lemon juice, garlic, and parsley. Whisk together. After 20 minutes, shake the pan a bit in the oven. Then put the broiler on for 3-4 minutes, until the sausage starts to become golden brown. Remove from the oven. Pour the butter mixture over the sheet pan and gently toss. Use what you got! That is the name of the game with this baked ravioli dish! I was going to a regular baked ziti with spinach but that would have actually called for a bit more work. Instead I pulled out one of my #halfwayhomemade moves and used frozen ravioli. I feel like when I add spinach to a baked pasta dish it is automatically healthier, haha! I elevated the dish slightly by adding a drizzle of some good olive oil and lemon zest over top. Then off to pick-up I went! 2 1/2 cups marinara sauce, divided 10-15 frozen ravioli 3/4 cup chopped baby spinach 1 cup shredded mozzarella cheese Sprinkle grated parmesan over top 1/2 tsp olive oil 1 tsp lemon zest In a small baking dish (such as an 8×8 pan) add 1/2 cup of sauce, spread around the bottom. Add one layer of frozen ravioli, cover with remaining sauce. Sprinkle the spinach and cheese in an even layer over top. Drizzle olive oil over top and lemon zest. I may be an avid homecook turned cookbook author but I agree with Queen Aretha. Being the one to carry the burden of “What’s for Dinner?” can actually keep me up some nights. But here is a big reminder: Give yourself a BREAK! It is okay if the break looks like breakfast for dinner, or even just cereal and fruit. It is okay if that dinner is Chick-Fil-A in the car on the way to dance class. It is also okay if you eat simple chicken cutlets and salad twice in one week. My point being, some weeks we can nail with carefully planned crockpot meals and sheet pan prep before carpooling. Other weeks we are ripping open boxes of Mac and Cheese with what sanity we have left. Whatever week it is, don’t beat yourself up. It will keep you out of the kitchen even on days where meal prep is possible. I try to play 2-3 meals a week, leaving the rest open for interpretation. Having some easy variations for pasta can help shake up your regular dinner time routine. When I feel like marinara sauce is getting a bit played out I love playing with ingredients. Adding in olives to make a puttanesca or this simple variation, adding prosciutto with sauteed onion gives the traditional red sauce something “extra.” You can usually find this cubed prosciutto in the grocery store refrigerator section near the bacon. However, you can also ask the deli counter to cut you a slice of prosciutto 1/4 inch thick and cube it yourself. 1 tbsp olive oil 4 oz cubed prosciutto 1 cup thinly sliced yellow onion, cut into half moons 2 garlic cloves, chopped 1/2 cup dry white wine 28 oz can crushed tomato 1/4, tsp kosher salt 1/8 tsp black pepper Heat the olive oil in a large saute pan over medium heat. Add the prosciutto, saute until browned about 5 minutes. Add in the onion, if the pan is dry, drizzle a little more olive oil, let the onions saute for about 5 minutes, moving them around the pan periodically. Season with 1/4 tsp kosher salt, and one 1/ teaspoon black pepper, continue to cook for 3 more minutes, then add in the wine, bringing it to simmer. Let it simmer for about 3 minutes before adding in the crushed tomatoes. Give it a gentle stir, and bring it to the simmer, and cover. Lower the flame and let it simmer for about 8 more minutes. Many of you spotted the smoked salmon crostini in my Easter brunch video. My family ended up loving this little bite! It is a super easy appetizer or would even translate into lunch. I used store bought crostini but you could also slice up a baguette and stick the slice in the oven for a bit. Put this on your list for your Mother’s Day brunch or your next slow Sunday morning! 1 package smoked salmon slices 2 avocados, mashed 2 tsp lemon juice 1/2 tbsp calabrian chili oil 1 tsp kosher salt 1/8 tsp onion powder pinch of black pepper 12 pieces of crostini or slices of toasted baguette bread microgreens for garnish Place the avocados in a medium size bowl and mash until they are a chunky consistency. Add in the lemon juice, chili oil, onion powder, salt, and pepper. Mix gently until well combined. Spoon about a tablespoon of the avocado mixture onto a piece of crostini. Slice a piece of smoked salmon into a piece that is about 1/2 inch thick. Use your judgement according to what will fit on the crostini. Repeat with the rest of the ingredients. Prior to serving you may want to drizzle with more chili oil, or a regular olive oil. Then top with microgreens if desired. Garlic cilantro rice is my easy side dish whenever we have tacos. It’s not an authentic dish by any means just one we like. I also use it as a base for bowls and even threw it in my sweet potato this week! If you are looking for authentic recipes, Head over to my friend @growingupsarita she’s the best! 1 cup rice cooked according to package directions 4 tbsp unsalted butter 2 tbsp chopped garlic 1 tsp kosher salt 1/2 tsp pepper 1/4 cup chopped cilantro juice of half of a lime Cook rice according to package directions and set aside. In a small saute pan, melt the butter over low-medium flame. Once butter is melted add the garlic and let it saute for two minutes. Season with salt and pepper, stir gently to incorporate. Add in the cilantro stir once more, remove from heat. Transfer rice to a large bowl. Pour melted butter mixture over rice, and squeeze the lime over top. Halfway Homemade Recipe! Found these sweet corn burrata and basil raviolis in @traderjoes and made a magic in minutes. This creamy garlic basil sauce was the perfect thing to bath these beauties in ! Best of all if came together in minutes! Don’t forget to save a bit of pasta water from boiling the raviolis! 2thin slices of prosciutto 2 tbsp unsalted butter, melted 1 1/2 tbsp finely chopped garlic 1/2 cup heavy cream 2 tbsp of reserved pasta water 1/4 mascarpone cheese 1 tsp (a squeeze!) of lemon juice 1/2 tsp kosher salt Pepper 1/4 cup fresh Basil, chopped In a large sauté pan drizzle some olive oil and fry the prosciutto until crispy, as if you were frying bacon. Remove from pan and reserve. Once prosciutto is cooled , roughly chop so it crumbles. Add the butter to the pan over medium low heat, once melted, add the garlic , sauté for one minute. Then add the heavy cream, and 2 tbsp of pasta water, stir gently, let it simmer gently for 5 minutes, season with salt and pepper. Turn off heat and melt in the mascarpone, squeeze in the lemon and gently stir in the basil. Add raviolis to the pan and coat with sauce. Panzanella is an Italian salad made with stale bread, usually sold chunky tomatoes, some red onion , it’s a favorite of mine! Adding in the asparagus gives this version a little “spring” in its step. Maybe this will inspire the weather?! The loose recipe for the components to this dish below! 1 tbsp Olive Oil ¾ cup asparagus, cut into thirds 1 shallot, thinly sliced kosher salt black pepper 2 cups cherry tomatoes, halved ½ cup fresh mozzarella, torn Old Italian Bread or Sourdough 2 thin slices of prosciutto cooked and chopped (as if making bacon!) Lemon Dijon Vinaigrette ¼ olive oil 2 tbsp lemon juice ½ tbsp apple cider vinegar 1 tsp honey 1 tsp dijon mustard ½ tbsp shallots chopped ½ tsp kosher salt 1/8 tsp pepper *Whisk together ingredients until well combined (emulsified) taste for seasoning. Add 1 tbsp of olive oil to a large saute pan over medium heat. Add the shallots and saute for one minute, then add your asparagus to the pan. Continue to saute until asparagus becomes tender for about 4 minutes. In that same pan add a drizzle of olive if the pan is dry. Then add the bread cubes, over medium/low heat. Saute the bread cubes until they become golden brown, tossing the cubes gently every so often. This should take about 4-5 minutes. Add the warm sautéed asparagus to a larger bowl, along with the bread cubes and cherry tomatoes. Pour the dressing over top and gently toss. Halfway Homemade: Sweet Italian Chicken Sausage with Fire Roasted Peppers and Onions, a one pan wonder! I love the halfway homemade series because it truly is a lot of my weeknight cooking. My desire to still put a decent meal on the table in between dance lessons, soccer, tennis and whatever else this little one signs up for . I take some short cuts like the @traderjoes frozen fire roasted bell peppers, and add in some fresh elements like the parsley and garlic. Which work together to create a quick and oh slightly elevated dish ! 1 tbsp olive oil 1lb trader joes sweet italian sausage 1 1/2 cups trader joes frozen fire roasted bell peppers and onions 1 large garlic clove thinly sliced 1/2 tbsp apple cider vinegar 1/2 cup marinara sauce 1/4 cup grated parmesan cheese 2 tbsp chopped fresh parsley salt and pepper to taste Heat the olive oil over a large skillet. Cook the sausages until brown on all sides and cooked most of the way through, about 15 minutes. Then add in the vegetables, and garlic. Saute for another 4 minutes, season with salt and pepper. Add in the apple cider vinegar, scraping up any brown bits from the pan if possible. After about a minute add the marinara sauce over top, along with the cheese. Let it all warm though for another 2 minutes. Make sure to measure the temperature of the sausages, the should measure 170 degrees. Seared lamb chops are super quick and easy! Generally, it seems that people are a little bit hesitant to try lamb. I was surprised that so many of you said, “yes!” to the recipe. It does have a very distinct taste, I think it is delicious! It is definitely worth a try! This dish is layered with flavor. From the marinade, to the greek yogurt with feta base, and the herby olive topping, this yields quite a delicious bite! It comes together in under 30 minutes, and the lamb chops cook up in about 6 minutes. The marinade recipe is below, but the full recipe is on dishitgirl.com, link is in the bio! Marinade 1/3 cup olive oil ¼ cup red wine vinegar ½ tbsp chopped fresh rosemary 1 tbsp light brown sugar ½ tbsp chopped fresh rosemary 1 tbsp garlic 1 tsp kosher salt ½ tsp black pepper Prepare the lamb chops by patting them dry with a paper towel and separating them. Cut down in between each bone to make the lamb chops individual. They should be in ¾ inch to one 1 inch thick chops Whisk ingredients together for the marinade and then pour over the lamb chops in the Ziploc bag. Close and gently massage marinade into the lamb chops, making sure they are well coated. Place in the fridge for about 30 minutes or up to 2 hours. Ok not quite custom made, but if you are planning an Easter brunch you need some #halfwayhomemade hacks. I use these mini pound cake shells I find in the grocery store and make a delicious mascarpone maple mixture and top them berries . It’s such a pretty addition to any table! I made a batch of mint simple syrup and will be using it for both the berries and lemonade. Toss two cups of mixed berries with 1 1/2 tbsps of Brown Sugar and Mint Simple Syrup. Recipe on DishItigrl.com. You could also toss the berries with 2 tablespoons of light brown sugar for similar effect. Filling 2 cups Mascarpone Cheese 1 tbsp Maple Syrup 1/4 freshly squeezed orange juice 1 tsp orange zest 3 heaping teaspoons of confectioners sugar 1/4 cup heavy cream Mix together all ingredients until smooth. I put the confectioner’s sugar into the heavy cream before adding it. Honestly, haricot verts are almost interchangeable with green beans in my world. They are a bit thinner and more “refined.” They have a slightly earthier flavor if you will. Whatever the case, they are crispy and served at room temperature with this delicious vinaigrette featuring sherry vinegar and shallots. It takes about 7 minutes to put together! Sherry vinegar may not be something you have on hand. So if you buy it for this recipe you can also use it in summer soups like gazpacho. It is great to use in steak marinade or when you are working with chicken thighs. It will open up a whole new world of flavor. The same applies to the mint and tarragon. They are great herbs to have on hand for dishes as the weather gets warmer! 1 lb green beans cleaned and trimmed 2 tbsp chopped shallots 4 tbsp sherry vinegar 1 tsp sugar 1 tsp chopped fresh mint 1 tsp chopped fresh tarragon 1/2 tsp kosher salt (more salt depending on your taste) 1/8 tsp black pepper 3 tbsp olive oil In a small bowl combine shallots, sherry vinegar, and sugar together. Set aside Bring a large pot water to a boil. Prepare a large bowl of ice water . Add the haricots verts to the boiling water and cook for 4 minutes or until bright green and tender-crisp. Drain the haricots verts (green beans) and quickly plunge them into the ice water. Let sit for 2 minutes or until cool; drain. Pat dry and place in a large bowl. Drizzle olive oil over top and toss. Add the mint, tarragon, salt, pepper, and olive oil. Whisk until well incorporated. Add half of the mixture to the bowl with green beans, toss to coat.
