I love the golden sunlight, the soft rustling of the leaves, and the bounty of ripe fruit adorning the trees. During my last visit, I was also able to grill up a tasty Korean BBQ short ribs dish, Galbi, with an Asian pear marinade. Korea has a long history of using pears in cooking to add flavorful sweetness and fragrance. It was so fun to cook in the orchard, surrounded by early Autumnal splendor.
This classic Korean barbecue uses fresh Asian pears, not only to add sweetness, but also to tenderize the meat.
The natural enzymes in the pears break down the meat’s tendons, to make for a texturally buttery and juicy piece of beef, while also creating unforgettable flavor and aroma. Do try to find the Korean LA Galbi cut— A Good Tip: when you order these cross-cut ribs from your butcher, ask for the thickest part of the meat along the bones’ hearty strips.

While on the farm, I also learned all about Subarashii Kudamono’s distinctive varieties of Asian pears, “the EliSan” is my favorite. This pear is an enticing bronzed color, and has flavor notes of kiwi and green apple. It is a staple in their farm’s repertoire as well as their head farmer’s favorite pear to harvest and to eat! I enjoyed its enchanting sweetness and juiciness first hand…right off the tree.
