A private appointment with Michael is akin to sitting with French royalty… but much more fun! You’re escorted to the mysterious second floor, upon where your bespoke encounter commences. If you’re lucky enough, an invitation to the secret roof garden follows… where you’ll ascend via a gated elevator nicknamed “Nixon” after a certain President who legendarily got stuck in it for over 20 minutes.

Fall is such a wondrous time anywhere, but particularly at the @subarashiikudamono Asian pear farm. I love the golden sunlight, the soft rustling of the leaves, and the bounty of ripe fruit adorning the trees. During my last visit, I was also able to grill up a tasty Korean BBQ short ribs dish, Galbi, with an Asian pear marinade. Korea has a long history of using pears in cooking to add flavorful sweetness and fragrance. It was so fun to cook in the orchard, surrounded by early Autumnal splendor.
This classic Korean barbecue uses fresh Asian pears, not only to add sweetness, but also to tenderize the meat.
The natural enzymes in the pears break down the meat’s tendons, to make for a texturally buttery and juicy piece of beef, while also creating unforgettable flavor and aroma. Do try to find the Korean LA Galbi cut— A Good Tip: when you order these cross-cut ribs from your butcher, ask for the thickest part of the meat along the bones’ hearty strips.
I promise that these ribs will melt in your mouth! Add fresh Asian pear to any meat dish actually – it’s amazing how it will enhance the flavor and texture.
While on the farm, I also learned all about Subarashii Kudamono’s distinctive varieties of Asian pears, “the EliSan” is my favorite. This pear is an enticing bronzed color, and has flavor notes of kiwi and green apple. It is a staple in their farm’s repertoire as well as their head farmer’s favorite pear to harvest and to eat! I enjoyed its enchanting sweetness and juiciness first hand…right off the tree.

When trying a new place, I aim to try something I’ve never had before, often asking for the house specialty or signature dish. Being a big fan of seafood, I usually lean towards pescatarian dishes.
To discover great dining spots in a new city, my advice is to ask the locals, such as your taxi driver, where they would go to eat. When in Rome, do as Romans do! Be a local! (Do not eat at McDonalds in Paris!)

I had often strolled past Scully restaurant in St James’s Market @scullyrestaurant. Yet, for reasons now beyond comprehension, I never ventured inside. That is, until recently, when I experienced what can only be described as one of the most intriguing culinary adventures of my recent memory.

Chef Scully, @scully_chef a maestro of global flavors (born in Malaysia to Indian, Chinese, Irish, and Balinese mixed parents, and then raised in Australia), orchestrated a tasting menu that truly delighted and surprised our taste buds. I cannot count how many times my friend and I exclaimed, “Wow, this is SO good!” in foodgasmic euphoria.

The menu reads like an atlas of worldly flavors. Eclectic for sure— truffle, bergamot, pomelo, finger lime, sambal, wild garlic, labneh, and more, married together into a seamless menu. The meal commenced with a seemingly humble bite that will linger in my gastronomic recollections for years: a crispy truffle and water chestnut stuffed chicken wing (yes, just a simple chicken wing!), served sans cutlery, accompanied by a sublime sauce accented with finger lime that I greedily sopped up in its entirety. I could have easily eaten a bucket of these.

This was followed by an arepa with Momma Scully’s eggplant sambal and a labneh kissed with the delicate essence of bergamot. Cod with fragrant wild garlic followed, then a crispy duck leg… all showcasing unusual flavors that happily played on our tongues.

As the meal drew to a close, we were charmed by the appearance of a diminutive pre-dessert pineapple popsicle, sooo cute and delicious.
We left with our bellies totally full and our minds still buzzing from the wonderous tastes we had just encountered… Chef Scully’s menu is a love letter to his heritage, traditions, and upbringing… and I am smitten.

Spent a brilliant day in the orchards of gourmet grower Subarashii Kudamono Asian Pears! @SubarashiiKudamono I walked among hundreds of trees brimming with honeyed round fruit just waiting to be picked, and fell in love with this jewel of a farm located in Pennsylvania not far from NYC.
Subarashii Kudamono means “wonderful fruit,” and these golden orbs live up to their name! Asian pears are one of my favorite fruits, but they have to be ripe, sweet, and juicy! These pears are lovingly hand-planted, picked, and packed, which ensures a delicious product.
I was so impressed with how much love and care goes into growing these nectar-filled fruits. All of the pears are naturally sun-ripened, and the farmers even “spin” the fruit while growing to ensure even exposure to heaven’s rays! I was so touched by what I learned about these exquisite pears.
This Fall, I’ll be sharing tasty bites about my visit – what I learned about their unique patented pear varieties, the distinct flavors, the terroir from which each tree thrives, how each tree is hand-sculpted, and the intense care in the picking and packing of the fruit by the orchard team.

These lamb chops are marinated in a blend of sake, gochujang, doenjang, mirin, and other savory umami packed ingredients. The result is a marinade full of complex rich flavors and aromatics.
Let the lamb marinate for at least 4 hours – or better, overnight. Lamb is not a popular meat in Korea, but its gaminess goes really well with Korea’s strong flavors. Serve this dish up with some padron peppers and dinner is complete!

“It’s a work of art!” is often exclaimed by diners when presented with gorgeous dishes in restaurants. The chefs usually get all the credit. But you must not forget about the farmers, whose workmanship and passion is just as artful.
I was reminded of the depth of this artistry during my visit to Subarashii Kudamono, an Asian Pear orchard, in Pennsylvania. The farmers do so much work in the fields before their “menu” of artisan pears is ready for harvest. Their own artistry includes sculpting and pruning the branches, ensuring that the trees are sturdy enough to support the weight of the juicy sweet fruit to come. Every pear is rotated by hand, for ideal and even coloration by the sun. Finally, the farmers inspect the skin of each pear, feeling the texture to confirm ripeness. Each tree and every pear is deeply cared for by the Subarashii orchard team. This artistry is tied to centuries-old traditions, honoring the sacred rituals of growing these special fruits by hand.
Subarashii pears are also patented – grown nowhere else in the world. Some are round, and squat and some are more oval. Each variety of Subarashii pear tastes different. I discovered fragrant flavors reminiscent of honey, melon, nectar, and nuts.
Inspired, I whisked myself into my kitchen to create some Asian pear dishes. You too can enjoy my recipes in your home kitchen: grilled Asian pears with ginger garlic chicken; or a comforting sandwich stacked tall with flavorful textures of cheese, bacon, fresh Asian Pear and pear spread; or a colorful holiday sundae with Asian Pears, snow-white cream, red cherries and green mint; or an ultra gourmet Yukhwe Korean steak tartare with Subarashii Asian Pears, green scallions and shallots.

Brazilian food is having a moment in London—and @bossa.mayfair is a welcomed addition to the Latin American dining scene. It’s a classy venue for sure, and a far cry from the more known rodizio all you can eat meat and churrascaria buffets.
Bossa has transformed this former Maroush space into an exquisite and stylish venue full of warm wood tones and modern art. An open kitchen allows you to peak in on all of the action as well, and observe the attention to detail and passion that the chefs put into their creations. Tucked in next to the Brazilian consulate just off Oxford Street, Bossa boasts a tranquil ambiance… and the moment you walk through the doors, you feel whisked away from the hustle and bustle outside.
I loved the crab pastel, a kind of large dumpling stuffed with spiced fresh crab enclosed in a bubbly crisp pastry served with a lemony acai dipping sauce. The seafood moqueca was a must order and incredibly tasty – extremely flavorful, studded with gems from the sea—octopus, prawns, mussels, squid and fish in a vibrant orange rich broth. I also really liked the texture of the banana farofa served on the side.
The aged ribeye was also executed to perfection. The Brazilians are known for their barbecue, and I was hoping that they would have the famed prized cut picanha, popular in Brazil, but the ribeye was good nonetheless. The dessert offerings, egg coconut custard and tonka bean flan, rounded off the meal on a high note, each dish offering a unique, well-balanced flavor.
I will be back to Bossa… and even better that it is practically on my doorstep in Marylebone.

Judy was the first female Iron Chef to appear on Iron Chef U.K., and has been a judge on various cooking shows, including Iron Chef America. She also hosted her own Food Network show, Korean Food Made Simple, has written two cookbooks, and has founded several restaurants, including Seoul Bird in London.
