Yet, for reasons now beyond comprehension, I never ventured inside. That is, until recently, when I experienced what can only be described as one of the most intriguing culinary adventures of my recent memory. . Chef Scully, @scully_chef a maestro of global flavors (born in Malaysia to Indian, Chinese, Irish, and Balinese mixed parents, and then raised in Australia), orchestrated a tasting menu that truly delighted and surprised our taste buds. I cannot count how many times my friend and I exclaimed, “Wow, this is SO good!” in foodgasmic euphoria. . The menu reads like an atlas of worldly flavors. Eclectic for sure— truffle, bergamot, pomelo, finger lime, sambal, wild garlic, labneh, and more, married together into a seamless menu. The meal commenced with a seemingly humble bite that will linger in my gastronomic recollections for years: a crispy truffle and water chestnut stuffed chicken wing (yes, just a simple chicken wing!), served sans cutlery, accompanied by a sublime sauce accented with finger lime that I greedily sopped up in its entirety. I could have easily eaten a bucket of these. . This was followed by an arepa with Momma Scully’s eggplant sambal and a labneh kissed with the delicate essence of bergamot. Cod with fragrant wild garlic followed, then a crispy duck leg… all showcasing unusual flavors that happily played on our tongues. . As the meal drew to a close, we were charmed by the appearance of a diminutive pre-dessert pineapple popsicle, sooo cute and delicious. Michael joined Hermes in 2006 at the Foubourg Saint Honore (the oldest Hermes store in the world) and is known as the “VIP Whisperer”. He knows all of clients tastes, whims, desires… even before they do!  He has built Hermes’ VIP division to be synonymous with elegance, grace, discretion, personalization, and style. A private appointment with Michael is akin to sitting with French royalty… but much more fun!  You’re escorted to the mysterious second floor, upon where your bespoke encounter commences. If you’re lucky enough, an invitation to the secret roof garden follows… where you’ll ascend via a gated elevator nicknamed “Nixon” after a certain President who legendarily got stuck in it for over 20 minutes.
