Copycat Erewhon Kale and White Bean Salad
When I’m in LA I go to @erewhon about 2 to 3 times a week to pick up their kale and white bean salad with creamy vegan dressing.
Since I’m in Miami and there’s no Erewhon, I made this copycat dressing at home.
Honestly, it is so easy to make, and if you are a kale hater, this dressing will turn you into a kale lover.

Ingredients for dressing:
Lemon zest from 1 lemon
Lemon juice from one lemon
1 tsp Dijon mustard
1 tbsp maple syrup
1/4 cup olive oil (pour some on the kale to massage and add the rest to the jar of dressing)
1/2 tbsp tahini
1/2 tsp salt
Pinch of black pepper
Method:
Wash and chop kale
Pour olive oil onto kale and massage
Mix all the ingredients for the dressing together and add half an avocado to the jar
Add dressing to the massaged kale
Add 1/2 avocado, cubed
Add 1/2 can cooked white beans (drained and rinsed)
Sprinkle of sunflower seeds
Sprinkle of hemp seeds
