I cannot imagine the @ktlamorningnews without you, Sam. I’m shocked and heartbroken and I will always remember you as the man who could make me (and everyone) laugh with your wittiness and self-deprecating humor. You were the ultimate wordsmith, always professional, kind and approachable. My mother would always comment that you were the only one on the news who pronounced my name right — Liberté — emphasis on the é. LA just lost one of its brightest lights. You will be missed. 🙏💔 #ripsamrubin #samrubin #ktlamorningnews

Mother’s Day is a mixed bag of emotions for me. To all the mothers out there, Happy Mother’s Day. For those without a mom to celebrate in person, I feel you. My mom ruled the roost with an iron fist. She was the ultimate Tiger Mom, filling my childhood with back-to-back activities, expecting me to excel in everything from competitive sports, school and later, my professional career. While she expected a lot, she also provided a lot in terms of support and education so I could succeed. She loved hard, but in an unconventional way, without hugs and “I love you’s,”and instead, with food and extravagant trips and experiences around the world. She taught me that a woman can do anything she sets her mind to and that preparation is key, presentation is everything, always leave things better than the way you found them, take advantage of opportunities, not people, and you should never stop learning (she completed her Masters at USC’s Iovine and Young Academy in Integrated Design, Business and Technology while going through chemotherapy and was posthumously honored with a degree). At 5 feet tall, 95 pounds, she was the strongest woman I ever met. Her creativity in design was evident in every aspect of her life. I’m so grateful for the life lessons and opportunities she gave me and I know I’ll see her again once I cross over to the other side. 💛 you mom Your little 🐉

RECIPE ⬇️ Mushroom Hot Chocolate * 16 ounces water * 2 Tbsp cacao powder * 2 1/2 Tbsp hemp seeds * 3 Medjool dates * 1/2 tsp (or 2 ml) Lion’s Mane * 1/2 tsp (or 2 ml) Turkey Tail * 1/4 tsp dried ginger * 1/2 tsp cinnamon Directions: Blend all ingredients. I used filtered hot water, but if you use room temperature to blend, heat it up over the stove or in a microwave after blending everything. Serve immediately and enjoy! One of the most common questions I get asked from friends and followers: “what do you think about mushroom coffee?” Here’s the deal. I’ve been adding medicinal mushrooms to my coffee every day, for the last eight years, but instead of using the powdered stuff, I prefer using a liquid dual-extract. Here’s why: I’m no doctor, but research shows using a dual-extract in liquid form is one of the best ways to ingest medicinal mushrooms because it increases the bioavailability of key nutrients locked inside medicinal mushrooms. That means you absorb more of the good, healing stuff. Plus, sometimes the powdered packs have fillers in them and/or they’re just not quite as potent as a high-quality extract. I use dual-extracts from @fungivalleyla a small, family-owned LA-based company I discovered at a local Farmer’s Market. Lion’s Mane turns on your brain and helps you stay focused and alert throughout the day. Turkey Tail strengthens your immune system and is often times given to cancer patients as a supportive therapy during treatment. At night, I add a drop of my Reishi dual-extract to my herbal tea, which helps me sleep. My husband has a different routine since he is not a fan of coffee. Every morning, I add a few drops of Lion’s Mane and Turkey Tail to his tea, but when he doesn’t feel like drinking tea, I make him this mushroom hot chocolate. #mushroomcoffee #mushroomhotchocolate #mushroomhotcocoa #medicinalmushrooms #lionsmane #turkeytail #adaptogens
RECIPE ⬇️ Mango Coconut Ice Cream If there’s one thing you should make this week, it’s this mango coconut ice cream. All you need are four ingredients (3 if you omit the honey!). It’s the easiest thing I’ve ever made and tastes SO good. The key to the recipe is freezing the mango overnight before blending everything together. The consistency is perfect and I promise you, you will not miss the milk and heavy cream that’s in traditional ice cream. Enjoy! Ingredients: – 4 Mangos (2 cups frozen mango) – 3/4 cup canned coconut milk (keep in fridge and use the top, thick part of the milk) – 1 Tbsp honey – 1 Tbsp monkfruit sugar Method: 1. Remove the skin and roughly chop the mangos. 2. Freeze the flesh overnight 3. Add the frozen mango, chilled coconut cream, and 1/4 cup honey and coconut sugar to a food processor and blend. #mangoicecream #dairyfreeicecream #lactosefreeicecream #mangococonut #veganicecream

RECIPE ⬇️ Copycat Erewhon Kale and White Bean Salad When I’m in LA I go to @erewhon about 2 to 3 times a week to pick up their kale and white bean salad with creamy vegan dressing. Since I’m in Miami and there’s no Erewhon, I made this copycat dressing at home. Honestly, it is so easy to make, and if you are a kale hater, this dressing will turn you into a kale lover. Save this post so you can make this later! Ingredients for dressing: Lemon zest from 1 lemon Lemon juice from one lemon 1 tsp Dijon mustard 1 tbsp maple syrup 1/4 cup olive oil (pour some on the kale to massage and add the rest to the jar of dressing) 1/2 tbsp tahini 1/2 tsp salt Pinch of black pepper Method: Wash and chop kale Pour olive oil onto kale and massage Mix all the ingredients for the dressing together and add half an avocado to the jar Add dressing to the massaged kale Add 1/2 avocado, cubed Add 1/2 can cooked white beans (drained and rinsed) Sprinkle of sunflower seeds Sprinkle of hemp seeds Enjoy! #copycatdressing #erewhon #kalesalad #creamyvegandressing #erewhoncopycat #erewhonrecipe

Not all iron is created equal. There’s heme iron, which you can consume from animal protein like meat, seafood and poultry and then there’s non-heme iron which is found in iron-rich plants like spinach, broccoli and beans. Turns out heme iron (from animal protein) is much easier for your body to absorb compared to non-heme iron from plants. However, when eating a meal that’s high in iron from plants, if you add a food that’s high in Vitamin C, it will boost the bioavailability of non-heme iron, which means your body will be able to better absorb it. Bottom line – when eating plants high in iron, pair them with foods high in Vit C to increase iron absorption! Perfect pairings: Broccoli and Lemon Juice Kale and Strawberry Smoothie Spinach Salad and Mango Lentils and Bell Peppers Hummus (garbanzo beans) and Lemon Juice #ironandvitaminc #vitaminc #perfectpairings #healthylifestyle #plantbased
