Liberté Chan Instagram – Not all iron is created equal. There’s heme iron, which you can consume from animal protein like meat, seafood and poultry and then there’s non-heme iron which is found in iron-rich plants like spinach, broccoli and beans.
 
Turns out heme iron (from animal protein) is much easier for your body to absorb compared to non-heme iron from plants. However, when eating a meal that’s high in iron from plants, if you add a food that’s high in Vitamin C, it will boost the bioavailability of non-heme iron, which means your body will be able to better absorb it.
 
Bottom line – when eating plants high in iron, pair them with foods high in Vit C to increase iron absorption!

Spinach Salad and Mango
Lentils and Bell Peppers
Hummus (garbanzo beans) and Lemon Juice
