6 leaves of gelatine (bloom value 240)
100 g heavy cream
50 g water
150 g caster sugar
150 g glucose syrup
50 g cocoa powder
Soak gelatine in cold water. In a small saucepan, bring cream, water, sugar, and glucose syrup to a boil and remove from heat. Squeeze excess water from gelatine and stir into the warm cream. Sift cocoa powder into a plastic pitcher. Add the warm cream a little at a time and stir until combined. Sieve and hand blend. Let cool down to 35-38 ยบC and pour over your frozen cake ๐ชโจ
