I haven’t posted because it felt wrong when there are so many people who knew him so much better than I did. But after processing it feels worse to not pay respect and tribute to someone I admired so much in our industry. I staged at EMP with Jamal years ago, arranged by my friend @chefchrisflint when I was thinking about leaving Le Bernardin. He was serious about the work, but didn’t take himself too seriously. He wasn’t aloof or standoffish, talked about his family background and helped me see myself in fine dining. Towards the end of service he gave me a piece of hiramasa and said “you guys from LB are good with fish, you have 30 minutes to create a dish.” I brought my dish to the pass where he dissected it, shared it with the sous chefs, and offered me a job. I stayed at LB and took sous instead but he always showed love when I saw him at events over the years, and every time I started with “you may not remember me…” He would always say “stop it, I know you” and said that even though I left restaurants he was glad I was killing it. After this picture (in early March?) I went out to dinner with Jamal and @chef.dannygarcia and what we thought would be a quick sit down turned into much longer. He was truly one of the coolest, most real people in our industry, in pursuit of the highest achievements but with both feet firmly on the ground. At dinner he was gracious with his advice and sharing insight, but also asked my perspective on things he was thinking through. He could have taken his foot off the gas at any point; he had already accomplished enough for an entire career but it also felt like he was just at the beginning of so much. His legacy will shine as brightly as he did. Praying for his beloved wife and children, and sending so much love and support to them, his loved ones, and entire team. Cheers to you, Chef
Resurfacing and stepping back into life like… 😊 Paris owes me nothing…except maybe better weather. Cooking has taken me so many places over the years, and most recently to Paris for a very cool project that was a few months in the planning…hence my recent absence, sorry Besties 🤦🏽♀️ I looked up and realized sooooo much time had passed! Most of the projects I work on are confidential so I can’t share details. I come in to get things set up and going. And when I’m planning a project I’m all in, I obsess over the details, the organization, efficiency of every move during service. I was raised in a restaurant so it feels like home, but I’m not so good at coming up for air 😂 I’m grateful that I’m also surrounded by professionals who GET IT DONE, anticipate the next step before it happens, and don’t hesitate to pull me out of the kitchen to appreciate the sight of the Eiffel Tower lighting up! 🤗✨ And thanks to our connected world I was able to see one of my mother’s dear old friends that I haven’t seen since she moved back to Paris. (Thanks for the pizza and long walk, Ms. Deborah!) And as much as I love high-end bakeries, I will always stop for a church bake sale and support the young women raising money for the nuns. High-key, they have thee best chocolate gateaux in the city! This world is so special, and so are the people in it. When I’m speaking with kids and teenagers I highlight our industry as a ticket out of whatever circumstances to see the world. Pay attention, work hard, don’t make the same mistake twice, and no matter where you go, you’ll be surrounded by family, even if you’re alone and all the restaurants you want to visit are closed 😂

Happy Juneteenth Freedom Jubilee Day to all. This is the true day of America’s independence, when ALL Americans know they are free. Today I thank my coterie of chef friends and colleagues who helped to bring my visions to celebrate this day to life during my tenure at @thespruceeats @dotdashmeredith. 1. As a follow up to my BHM programming, I took the first step writing the first Juneteenth piece for Spruce Eats ever and right before publishing @potus declared June 19th a federal holiday! 2. Had to hit up @rosh_lashana of @forthecocktailculture again to bless us with a cock-tale tying historical facts to cocktail ingredients to tell a delicious story. 3. If you love @chefadriennecheatham cooking, read her writing. Thoughtful and inspired is all I can say. 4 5.
