Kristína Nemčková Instagram – Restaurant Kadeau @restaurantkadeau was founded by two childhood friends who grew up together on the Bornholm island – headchef @nicolai_kadeau and sommelier @rasmus_kofoed_kadeau . The first Kadeau was opened in 2007 on the Bornholm island, with the aim of creating a hyperlocal restaurat, by using only local ingredients, which are dried, pickled, preserved and smoked. The island „lives“ mainly in summer so the partners, who were joined by Magnus Kofoed, decided to open another branch of their restaurant directly in Copenhagen in 2011.
Their chain of restaurants also includes gardens founded by Nicolai’s father, Flemming Nørregaard, spread over 4 plots of land where fresh herbs, fruit and vegetables are grown and bees are kept for honey.
Kadeau is a typical Nordic restaurant where you can taste seemingly simple dishes that will captivate you with their elaboration, taste and texture. The menu, worth around DKK 3000, contains 20 courses and is put together to reflect the essence of Bornholm, with an emphasis on seasonality and sustainability. The signature dish of the restaurant can be considered “hot&cold salmon” (several times smoked salmon).
Today, Bornholm’s Kadeau boasts one star, being the only Michelin restaurant on the island, and the Copenhagen branch has two Michelin stars to its credit. Both branches also received a green Michelin star, which is awarded for sustainability.
