I love that they have their own baker who produces bread for the exact number of guests to reduce waste, and you can even order items off their menu such as pasta and pizza made from untouched and dried bread waste from the day before. These are the small details that many don’t realize have a huge impact in hospitality. This spoke to me on a soul level. If you know me, you know I never leave food to go to waste on a table. I’m often vocal about my passion for water quality/sourcing, and I could go on and on about their water which comes directly from the mountain through the tap and is served in glass bottles that are constantly reused. Not recycled. But reused. Sourcing local is a key component of sustainability and this philosophy is seen/felt throughout many of the decisions made here. And as someone who is always so conscious of slipper waste at hotels, I found it so sweet that they provide all guests with their very own unique slippers made out of wool to avoid the use of unnecessary plastics, giving everyone the opportunity to take them home and reuse them for a lifetime. Back to that word again; dreamy. There is no plastic in the kitchen, only glass tupperware which is such a perfect representation of the thoughtfulness here. It seems inconsequential but in reality it saves thousands of pounds of plastic per year. If I could click my heels and never leave, I would do it right now.
