INGREDIENTS:
2 chicken breasts
1 cup of panko breadcrumbs
1 egg
1/2 cup of flour
Spray olive oil
50g butter
2 cloves of garlic
Small bunch of parsley
Salt & pepper
METHOD:
1. Prep your breading station, use three bowls one for the flour, one for the beaten egg and the last for the panko crumbs. Season the crumbs with some salt and pepper.
2. Cut your chicken into bite size pieces then dip each piece into the three bowls. Flour first, egg second and panko last – really push each piece into the panko for an even an even coating.
3. Pop into the air fryer and spray with olive oil. Bake for 7 minutes on each side (turn half way and spray with the olive oil again) then check they are fully cooked through.
4. While your chicken is cooking, melt your butter on a low heat, add your garlic and cook for a minute or two (careful not to burn, keep the heat low) then add your parsley.
5. Remove your chicken from the air fryer and pour over your garlic butter.
